A Ramadan Treat ✨ orange blossom honey custard with a pistachio honey crumble. Orange Blossom Honey Custard - 2 cups heavy cream 5 egg yolks 1 tbsp of orange blossom water 3-4 orange peels 1&1/2 tsp of vanilla extract 1/3 cup of honey Pinch of salt Pistachio Honey Crumble - 1/2 cup of finely chopped pistachio 2 tbsp of sugar Drizzle of honey Pinch of salt Zest of 1/2 an orange 1/2 tsp of olive oil Instructions: 1. On small pan lined with parchment paper, add the chopped pistachio, oil, salt, sugar( I rubbed the orange zest with the sugar to release the oils) , and drizzle of honey all over. 2. I baked the pistachio while the custard was baking. I baked until fragrant about 10 -14 min. You want to keep an on it and gently stir last 3 min of baking. 3. Once it is ready, I like to add additional orange zest on top. Set aside to cool. Then use your fingers to break the pistachio into crumbles. Instructions Preheat the oven to 320F. Place 5 glass ramekins in a baking tray with sides. Have hot water ready. 1. In a pot, add cream, orange peel, orange blossom water, salt and stir. Heat the heavy cream until hot but not boiling. Turn the heat off and allow the orange peel to infuse the cream (10 minutes). 2. In a medium bowl, whisk the egg yolks with vanilla extract until smooth. 3. Now gently add some warm cream mixture into the egg yolks and whisk vigorously to temper the eggs. Then pour the egg mixture to the remaining cream and whisk until well combined. 4. Pour the mixture through a sieve. 5. Carefully pour the custard mixture into the ramekins, make sure to evenly distribute it. 6. Carefully transfer the pan to the oven and place on the middle rack. 7. Then pour in the hot water into the baking dish around the outside of the ramekins halfway up the sides. 8. Bake for about 35 -40 minutes or until the edges are set and the middle jiggles just a bit. Jiggle Test: To check if they’re done, shake them a bit, and if they move like jello moves, then they are done. But if they are a bit loose at the center, bake them for a few more minutes. 9. Once done, allow to sit in room temperature for 15 minutes. Then place in the fridge to cool for about 2-4 hours or overnight. 10. When you are ready to serve, top with pistachio crumble and drizzel of honey.
