We love a Sunday roast…. & this one cooked on the @Weber UK is one of our favourites! [AD] We’ve opted for a leg of lamb cooked on the poultry roaster… but this accessory has a lot more uses than just cooking poultry!! I’d love to know other ideas you have for using the poultry roaster - let me know in the comments! Lamb Rub Fresh Rosemary 5-6 sprigs 4 Garlic cloves Mint - 5-6 sprigs 1 Tbsp Salt 1/2 Tbsp Pepper Oil approximately 1/4 cup Lemon Zest Lemon Juice Optional 2-3 Anchovies in lieu of Salt Add all the ingredients to a blender & blitz to make a thick paste. Set aside a small amount of the paste to mix with the veggies. Make 3-4 cuts on the lamb leg through the skin To allow the marinade to penetrate. Slather the mix over the lamb leg at least 30 mins before cooking. Then roast indirect on the BBQ (or in the oven if you want to cook indoors). Place the vegetables around the lamb and this will allow the fats & some rub to fall on them during the cook adding tons of extra flavour to the veggies. Cook to 60°c internal for medium. The lamb leg being inconsistent in thickness will then give slices of well done to medium to suit all guest. For the Yorkshire puddings Ingredients: 200ml whole milk 4 eggs 200g plain flour Pinch of salt METHOD Preheat BBQ / Oven to 250C. Whisk the milk and eggs, then sieve in the flour and salt to avoid any lumps, continue to whisk until smooth and no lumps remain. Place the batter mix into the fridge in the fridge for at least an hour, or overnight. So great to make ahead and save time. For the roasties, peel and part boil your potatoes for 6mins. During this time heat some oil (I used beef tallow) on the BBQ. Drain & Let the potatoes air dry, then transfer to the try of hot oil. Chicken Parm Sliders…. Picnic food doesnt have to be boring…. & a picnic with a BBQ is always going to be better in my mind! Travelling light we blitzed some sourdough at home to make the breadcrumbs to take along! I smashed the chicken breasts down to make them consistent thickness for frying. To the breadcrumbs I added some garlic granules, oregano, salt & pepper A little flour before a dip in the egg mix then into the seasoned crumb!! I preheated the oil to 190°c in the skillet on the grill. As soon as the chicken was breaded it was into the oil for a shallow fry. Once golden I moved it across to the roasting rack / shield to finish whilst I got the next one in. I made a quick garlic butter with 2 cloves smashed & chopped then added some flat leaf parsley. After roasting the rolls I added the cheese slices, followed by the chicken, topped with the Ballymaloe sauce and some grated cheese giving the roll tops a brush with the garlic butter…… I mean can you ever have too much flavour??? Placing it all back onto the roasting rack / shield for 5 mins until the cheese was nicely melted. Picnics don’t need to be boring…….
