22/30 of the casserole series Healthy stuffed pepper casserole 😋 Healthy Stuffed pepper casserole 1 pound ground beef or turkey 1 yellow onion, diced 1 tbsp olive oil 2 bell peppers, diced 1 1/2 cups long grain white or brown rice (uncooked) 28 ounce can crushed tomatoes 15 ounce can diced tomatoes 3 garlic cloves, minced or 1 tsp garlic powder 1 tbsp Italian seasoning 1/2 tsp salt and pepper 1 cup shredded mozzarella cheese Preheat oven to 350° Sautée the onion and peppers in 1 tbsp olive oil. add in the garlic and ground beef and cook until no longer pink (drain if necessary) Pour in the tomato sauce, diced tomatoes, rice, and seasonings. Give it a good mix. Pour into in a greased 9x13 baking dish. Cover in foil and bake 20-30 minutes until the rice is cooked through.
