Miso on my salmon forever !!! Recipe (Serves 4): 1 lb brussels, stems removed and sliced in half or thirds 2 sweet potatoes, cut 1/4” thick 1.5 lbs thick cut salmon (I used king salmon) 2 tbsp olive oil Salt + pepper, to taste Green onions, diced Miso glaze: 2 tbsp miso paste 1 tbsp sesame oil 1 tbsp honey or maple syrup 2 tbsp rice vinegar 2 tbsp coconut aminos Optional: sriracha to make it spicy 1. Preheat oven to 400 and line a large baking sheet with parchment paper. 2. Toss the Brussels and sweet potatoes with 2 tbsp olive oil, salt and pepper. Spread in an even layer and bake for 5-7 minutes. 3. Meanwhile, prep your salmon by seasoning with salt and pepper and drizzling with olive. Make room on the sheet pan for the salmon in the center. Return to oven for 20 minutes. 4. Make your miso glaze by whisking all ingredients together. Taste and adjust sweetness or spice level if needed. 5. After 20 minutes, remove veggies and salmon and pour glaze over the top of everything. Return to oven for 5 minutes.
