Day 25/30 casserole series Chicken Cheesesteak Casserole with Spaghetti Squash 2 lbs boneless skinless chicken breast cut into pieces 8 ounces mushrooms, sliced 1 onion, diced 1-2 bell peppers, diced 2-3 lb spaghetti squash (or use cooked pasta) 2 cups shredded mozzarella cheese 15 ounce jar Alfredo sauce 1/2 cup grated parmesan cheese 1 tbsp olive oil Salt and pepper to taste 1 tsp garlic powder 1 tbsp Italian seasoning Preheat oven to 350°f. Pierce the spaghetti squash all over with a fork, microwave for 10 minutes. Let cool slightly and cut in half. Scoop out the seeds (save to toast or discard). Using a fork remove all the spaghetti squash strands. Set aside. To a large pan add the oil, chicken, mushrooms, onions, and peppers. Cook until chicken is browned on both sides. It doesn’t have to be cooked through- it will finish cooking in the oven. Add in the seasonings, parmesan cheese, alfredo sauce and spaghetti squash and mix together. Add the mixture to a 9x13 oiled baking dish- adding 1 cup of the cheese layered in the middle and topping with the remaining cheese. Bake covered 30 minutes. Broil the last couple of minutes- if desired. Let sit 10 minutes to set and cool before serving. Add additional Parmesan cheese and parsley. Like this recipe? Make sure to share it!
