AND all four of my kids inhale it. 🥦🫑 ✨ Balsamic Chicken & Veggies ✨ * 2 small zucchini, cut into 1-inch pieces * 1 - 2 small yellow squash, cut into 1-inch pieces * 1 bell pepper, cut into 1-inch pieces * 1 red onion, cut into 1-inch pieces * 1 head of broccoli, cut into pieces * 2 boneless skinless chicken breasts, cut into thin strips * ⅓ c balsamic vinegar * 3 Tbsp avocado oil * 1-2 Tbsp honey * 1 tsp dried basil * ½ tsp dried oregano * 1 tsp salt * ½ tsp pepper Preheat the oven to 400° F. Put all cut veggies and chicken strips on sheet pan. Mix the rest of the ingredients in a bowl. Pour over veggies/chicken. Toss everything together until evenly coated. Bake for 12-15 minutes until the vegetables are soft and chicken is cooked through. Serve over rice, quinoa, or pasta.
