Makes a lasagne that’ll feed 4-6 people 1kg good quality beef mince 2 onions 2 carrots 2 celery 2 tbsp tomato paste 500ml red wine 2 bay leaves 1 Parmesan rind 800g good quality plum tomatoes 100g butter 80g plain flour 800ml milk Nutmeg 80g Parmesan Fresh pasta sheets Mozzarella Parmesan Olive oil Salt Black pepper 1. Brown the beef in hot olive oil when caramelised remove from the pan 2. Add more olive oil to same pan and add the dice veg with a pinch of salt. Once softened add the tomato paste and cook out, add the beef back to the pan with red wine and reduce by 1/2. 3. Add the tomatoes, bay and Parmesan rind. Cover and simmer for 2-3 hours I like 3 but whatever you think 4. to make the bechamella add the butter to a pan and melt then add the flour and form the roux. Add the milk in stages continually stirring to avoid any lumps. Season to taste with salt, nutmeg and Parmesan. 5. Blanch the fresh pasta for 30 seconds 6. Finish the ragu with salt and black pepper to taste 7. Layer up the lasagne with as many layers as you can fit into the dish adding mozzarella and Parmesan between the layers this is optional but can’t imagine any wouldn’t want it. 8. Bake at 180c for 45 mins rest for 15 mins then serve #lasagne #italianfood #comfortfood #ragu #bechamel
