Balsamic Glazed Chicken mmmm… mmm… bone in or boneless, skin on or skinless, your choice. Here is how: 8-10 bone is chicken Pat dry and season: 1/2-1 tsp salt Pepper 1 tsp dried herbs (thyme, oregano any combo) 2 tbs olive oil Toss well Arrange on a cookie sheet lined with parchment paper, tuck half a garlic clove under each piece. Bake at 425 for 20 minutes In the meantime, chop 2 carrot 1 red onion 1 cup Brussels sprouts 1 yellow squash / zucchini Toss with 1/2 tsp salt 1/2 tsp dried herbs Pepper 2-3 tbs olive oil Remove chicken from the oven after 20 min and spread veggies Bake for another 25 min Drizzle balsamic glaze all over the pan and brush the juices on the chicken evenly Bake for another 5 min. Brush the juices again. Serve and prepare to lick the plate clean… ymmmm… For boneless skinless chicken, arrange the chicken on a cookie sheet with the veggies at the same time and bake at 425 for 35 min. Here is how: Poke the squash and cover with wet paper towel, microwave for 5 minutes, this will soften it and make it easier to cut (you can skip that part and go directly to the next step). Cut in half and clean seeds. Drizzle with salt and olive oil and bake at 425 for 20-25 minutes. At this stage, you can trim the pointy end of the squash so it will sit stable when you turn it open half up. While the squash is cooking make the stuffing: 1/2 cup quinoa cooked with 1 cup water.
