But we wanted to try out this method (there are several including buttering your eggs!). My mother packed them in July 2023 so it was time to test them out. WHY WATER GLASS EGGS? Water glassing is a technique our great-grandparents used to store eggs before there were refrigerators, freezers, freeze-dryers, and dehydrators. The drop in egg production is between fall through early spring because of the cooler temps. So to prep for the lack of eggs during these months, they would water glass....and in today's world, you never know when you will need to use this technique....so you better learn! And that's exactly what we did here (so learn with us!) HOW TO WATER GLASS EGGS Ingredients and Equipment: XL glass jar + lid 5 ounces hydrated lime (pickling lime) 5 quarts distilled water or natural spring water fresh eggs, clean and unwashed Instructions: In your jar, add an equal ratio of water to lime. Use the ratio of one quart of water to one ounce of lime regardless of the container size. Mix the pickling lime and water until completely dissolved. Next, gently add eggs to the liquid. Add pointy side downs allowing the air cells to remain at the tops of the eggs. Tightly screw on the lid to prevent the liquid from evaporating and the eggs from becoming exposed to air. Store the water glass eggs in a cool dark location.
