Birria Ingredients 1kg beef - diced into big chunks Salt and pepper to taste A little oil for browning the beef 1 large white onion 2-3 tomatoes 2 dried Pasilla chillies 8-10 dried Arbol chillies 3 dried Guajillo chillies - (All chillies linked in my Amazon store, in my bio under seasonings I use) 2tbsp tomatoe purée 1 cinnamon stick 3 bay leaves 1tsp black peppercorns 3-5 whole cloves 300-500ml cold water 2tbsp white vinegar 1tsp ground cumin 2tsp dried oregano 7 garlic cloves 10 corn tortillas 250g Mozzarella cheese Chopped white onion & coriander for consomé Method Salt and pepper your beef and set aside. Cut the tops off of all of the chillies and remove the seeds. Brown off the beef in a pan in some hot oil. Remove from the pan once browned on both sides and add the onion, tomatoes, cinnamon, peppercorns, cloves, bay leaves, tomato purée and chillies to the pan. Add enough water to cover and mix in the tomato purée. Cover with a lid and cook until everything is soft. This should take about 15 minutes. Once soft, remove all of the veg and seasonings from the liquid and add to a blender. Add 100ml of the cooking liquid plus the vinegar and blend. Once smooth add the garlic, cumin, oregano and blend again until smooth. Place the remaining cooking liquid into a pan big enough to fit all of the beef. Then add the beef into the same pan. Using a sieve strain your blended sauce into the pan with the beef, mix, put a lid on and cook on low for 3 hours. After this time remove the beef from your now consomé and shred the beef with two forks. Heat a pan, dip your corn tortilla into the consomé and then add to the pan. Add the cheese, the beef, some consomé and finally the onion and coriander. Fold into tacos and cook for a few minutes until brown on each side. Serve with a bowl of consomé and lime.
