Tips & tricks: 🔪 Start with a thick cut steak, especially if you like your steak medium rare. This will give you a buffer to ensure you don’t over cook the steak…steak cooks quicker than you think. 🔪 Season the steak generously with salt and pepper from high above — this will make sure you get an even coating of salt — and allow the steak to come to room temperature before cooking. 🔪Get your pan VERY HOT. Once the pan is hot, add a touch of neutral oil and then add the steak. You’re looking for a fast,hard sear to lock in the juices — NOT to cook it all the way though (depending on the thickness!) Start with the fat cap, then sear one side and after its golden brown, flip and immediately baste! 🔪 Add in aromatics (garlic, rosemary, thyme etc.) after flipping, along with butter as you baste. This will infuse a wonderful subtle flavor. 🔪Finish cooking the steak in the oven. I like it at 375 F, typically for around 5-7 minutes for a 2 inch steak. Once you reach an internal temp of 130 (for medium rare) pull it out and allow it REST!
