Using a fork, gradually incorporate the flour into the eggs until a dough forms. Knead the dough for about 8-10 minutes until it becomes smooth and elastic. Wrap the dough in plastic wrap and let it rest in the fridge for about 30 minutes. 2. After resting, cut the dough into smaller portions. Working with one portion at a time, flatten it slightly with your hands. Using a pasta machine or a rolling pin, roll out the dough into thin sheets.
