Ok, welcome to episode 10 of Meliz’s (and Emine’s) Meyhane and today I’m cooking with my lovely mum, Emine 💕🧿 we’re making “Soğanlı Ciğer ve Badadez” a no-frills, Turkish Cypriot style lambs liver, onions and potatoes served with loads of fresh flat-leaf parsley and lemon juice. Please make it. LIVER 3 tbsp sunflower / rapeseed / rice bran oil 500g lambs liver, cut into 2cm cubes 1 medium brown onion, peeled, halved and very thinly sliced 1 heaped tsp sea salt flakes 1/4 tsp coarse black pepper TO SERVE Fresh, flat leaf parsley Peeled and very thinly sliced brown onion Lemon wedges METHOD Add oil a large shallow frying pan and place on hob a medium-high heat. Once hot, add liver, let it sizzle, and stir frequently, for 5-6 minutes. Add onions, sprinkle in salt, mixing into simmering liver and cook for another 5 mins or so until onions fully soften and most of the liquid in the pan evaporates. Stir through black pepper and serve immediately, while still hot, with lots of fresh parsley, lemon juice, raw onion all alongside the crispy cubed potatoes. POTATOES 4 tbsp olive oil 800g cyprus / Maris piper potatoes, peeled and cut into 2cm cubes 2 tbsp cornflour (cornstarch) Preheat oven to 210c fan. Brush a shallow, metal baking tray with 2 tbsp of olive oil and pop tray in oven for 10 mins. Add cubed potatoes to a large bowl, sprinkle over cornflour, shake the bowl well so all the cubes are coated. Drizzle over remaining olive oil, shake bowl so the potatoes are glossy and oil mixes with cornflour to create a light, paste over the potatoes.
