Pat dry and season 3. Let it sit to come to room temp (30 min) and preheat oven 260 4. Put steak in for 18 mins flipping it halfway through the timer 5. Heat cast iron on high 6. Sear fat cap first 45 seconds 7. Reduce to medium high Lay the steak down and sear for 3.5 minutes and then flip. If your steak is smaller than 1.5” thick sear for 2mins each side 8. Sear rest of sides (20-30 sec) 9. Pull off onto wood cutting board and let rest for 8 minutes 10.
