Episode 6 of fall soup sunday: chicken & gnocchi soup 🫶 Gnocchi Recipe (2 servings) -2 baked russet potatoes -2-3 cups of flour -1 egg yolk -salt -pepper -fresh grated parmesan (optional) 1. Bake the potatoes at 400 degrees for 1 hour or until fully cooked through. 2. To a large bowl, add the scooped potatoes, flour, egg yolk, salt, pepper, and parmesan cheese. Mix until a rough dough starts to form 3. Add the dough to a floured surface. Divide the dough into 4 pieces and roll out into skinny logs. Cut your gnocchi into 1 inch sized pieces. Soup Recipe -2 tbs olive oil -2 tbs butter -1/4 yellow onion -2 small or 1 large celery stalks -2 small or 1 large carrots -2 cloves of garlic -1/4 cup flour -6 cups of chicken broth -2 cups of shredded chicken -1 serving of gnocchi -1 cup of spinach -salt -pepper -thyme 1. Dice your onion, celery, and garlic. Shred your carrots. 2. To a dutch oven or large pot, add your olive oil and butter. Once melted, add the carrots, onion, and celery. Cook for 5 minutes and add your garlic, thyme, salt, and pepper. Cook for another 1-2 mins. Add your flour and cook for 3-4 minutes. 3. Once the flour has cooked, add your broth/stock. Bring that to a boil and add your chicken, gnocchi, and heavy cream. 4. Once the gnocchi have cooked, add your spinach and cook for 1-2 minutes. 5. Serve and top with freshly grated Parmesan cheese. Let me know what soup yall wanna see next 🫶 Meatballs (4-5 servings) -1/4 yellow onion finely diced -1/4 cup breadcrumbs -1 egg -1 tablespoon heavy cream or milk -2 teaspoons of worcestershire sauce -2 tablespoons of tomato paste -fresh parsley (optional) -1/2 pound of ground beef -1/2 pound of italian sausage -salt -pepper -garlic powder -ground sage Soup (2-3 servings) -1/4 yellow onion diced -1 medium carrot diced -2 small stalks of celery diced -2 cloves of garlic -salt -pepper -fresh thyme, diced -ground white pepper -2 cups of chicken broth -2 cups of beef broth -1/2 cup acini de pepe or ditalini pasta -meatballs -1/2 cup spinach 1. Dice your carrots, onion, celery, garlic, and thyme. Add olive oil and butter to a pot. Add your veggies and cook until soft. Add the garlic, thyme, salt, black pepper, and white pepper. Cook for 2-3 minutes. 2. Add your chicken broth and beef broth to the pot. Bring to a boil and add in your noodles. Cook according to the package. 3. Once the noodles are almost cooked, add your meatballs and spinach. 4. Serve with freshly grated parmesan cheese and parsley. Lasagna soup on this episode of Fall Soup Sundays! I love lasagna and soup, so this is the perfect combination 👩🏻🍳 This one is great for a crowd or if you need to feed a lot of people! Recipe (4-5 servings) -1/2 yellow onion, diced -2-3 cloves of garlic, minced -1/2 pound ground beef -1/2 pound italian sausage -1/4 cup tomato paste -1/4 cup red wine -1 can crushed tomatoes or tomato sauce -1 carton of beef broth -6-8 lasagna noodles, broken into pieces -salt to taste -pepper to taste -garlic powder to taste -italian seasoning to taste -1 teaspoon of brown sugar or honey -ricotta cheese -parmesan cheese 1. Add a drizzle of olive oil and a tablespoon of butter to a pot over medium heat. Add your onions and sauté until they begin to turn translucent. 2. Add your ground beef and italian sausage. Use a meat chopper or spatula to break the meat into small pieces as it’s cooked. 3. Once the meat is fully cooked, add your garlic and cook for 1-2 minutes. Add your salt, pepper, garlic powder, and italian seasonings. 4. Add the tomato paste and cook for 2-3 minutes or until it turns to a dark red color. Deglaze with your wine and cook for another 1-2 minutes. 5. Add the tomatoes and beef broth. Bring the soup up to a simmer and add your broken lasagna noodles in. Add your brown sugar/honey. 6. Cover the soup and let cook for 10-15 minutes or until the noodles are fully cooked. 7. Serve and top with a scoop of ricotta cheese and fresh parmesan cheese.
