𝙉𝙊 𝙒𝙍𝘼𝙋 𝘽𝙍𝙄𝙕𝙕𝙔 : Lately I've working on my brisket game trying different methods. Learning from the best out there and trying out their methods or a combination of their methods to see what works for me. This time I did a simple no wrap on my offset for the entire cook but then wrapping it w/ butcher paper during the overnight rest in my electric smoker that I use solely as a warmer. I think it came out pretty good for being a no wrap. Expected it to be a bit dry but it wasn’t bad at all. Probably because it was a high quality American Wagyu from @rcranchtx which you can never go wrong with 💯.
