cozy quiche in a bus home 🌿 : •6-8 eggs •1/2 onion •1 tsp garlic •5 Oz spinach •4 Oz feta •1/2 C black trumpet mushrooms •1/2 tsp black pepper Sauté mushrooms, onions, garlic, and pepper. Add spinach & feta. Set mixture aside. Beat eggs in separate bowl, fill pre-baked crust with filling, then pour eggs on top. Crust •1 1/4 C flour •1/4 tsp salt •1/4 tsp sugar •1/2 C cold butter •4 tbsp ice water Mix dry ingredients, then add cold chopped butter. Mix until crumbly, then add ice water slowly. Mush into a ball and chill dough before rolling flat, flute crust edge & prick with a fork when in pie dish. Chill for 30 mins before pre baking. Pre-bake crust with pie weights, (I used parchment paper + dry beans) add quiche ingredients.
