I used to make lunch such a production and I loved that phase of my life but right now I’m in a place where convenient and easy is key. I fell into this super basic sandwich routine while we were on vacation because I didn’t want to over-buy groceries or over-commit to cooking things. I may have left Florida, but cheese sandwiches came with me. It’s actually quite freeing eating a cheese sandwich because it’s a favorite of mine that was off limits because of diet culture.
