Doubles🇹🇹🇹🇹 Ingredients * Bara 360g Plain flour 1tbsp brown sugar 1/2tsp turmeric 1tbsp yeast 1/2tsp salt 250ml warm water Enough oil to shallow fry * Channa 2 tins chickpeas 1tbsp green seasoning 1tsp turmeric 1tsp geera (cumin) 200ml water Pinch of salt A little chadon beni (sub - coriander) to finish * Roasted pepper sauce 3 roasted scotch bonnets Juice from 1 lime 1/2tsp salt * Chadon beni sauce Small bunch of chadon beni (sub - coriander) 50ml water 1/2tsp salt 1tbsp sugar * Mango chutney 1 large mango 200ml water 2tbsp brown sugar 1/2tsp geera (cumin) 1/2tsp turmeric 1tsp amchar masala 1 clove of garlic, grated 1/2tsp chilli (optional) 1/2tsp salt * Grated cucumber Method To the flour add the sugar, salt, yeast, turmeric and mix. Slowly add the water until you have a soft dough then form into a ball (no kneading required). Add some oil to the top of the dough and cover the bowl. Allow to rise in a warm place for 30 mins - 1 hour. Add the drained chickpeas into a saucepan then add the water, turmeric, cumin, salt and green seasoning. Mix then cook on medium heat with the lid off until the liquid has reduced slightly. Finish with some coriander. Once your bara dough has doubled in size. Knead back together and remove from the bowl. Oil your hands and divide the dough into 10-12 balls. Heat the oil in a pan. While the oil is heating, on an oiled surface flatten the dough balls into your desired thickness. Place one bara at a time carefully away from yourself into the hot oil. Fry for 10-15 secs on each size then remove and place into a bowl lined with kitchen towel. Repeat until all of the bara are cooked. * Mango chutney To a saucepan add the fresh mango, water, cumin, turmeric, amchar masala, salt, garlic and chilli. Cook on high for 10-15 until the liquid has reduced by half. * Chadon beni sauce To a blender add a small bunch of coriander, water, sugar and salt then blend. * Pepper sauce Fire roast some scotch bonnet chillies, by placing under the grill or carefully over a gas hob cooker. Once charred add to a blender with the salt and lime juice.
