Did anyone hear the PIG, I mean, BIG news today?! Tyson Foods is shutting down yet another pig slaughter house, due to lack of demand! ❤️🐽This facility will be the *ninth* to close since early 2023! In honor of this, our humans are going to be sharing some yummy vegan dinner ideas, that are delicious & nutritious! 😋 Here’s one of our faves for taco Tuesday- baked spinach black bean 🌮’s! Ingredients- •8oz of Adobe Chipotle Peppers •2 medium onions •4 tablespoons tomato paste •1/2 teaspoon chili powder •1 packet of taco seasoning •Two cans of blackbeans •3/4 cup vegetable stock (or broth) •1 lime (juiced) •Spinach (as much as you can fit into your skillet! 😆) •2 tablespoons minced garlic •30 Corn tortillas •Extra Virgin Olive Oil •Half teaspoon salt •Half teaspoon pepper For dipping- Guac, fresh salsa, or taco hot sauce go great! Fill skillet with spinach, two medium (chopped) onions, a spoonful of minced garlic and salt/pepper. Add a few tablespoons of olive oil and sauté. Cook about 7-8 minutes while stirring occasionally. Stir in the Adobe Chipotle Peppers, taco seasoning packet, and tomato paste. Let simmer 3-5 minutes, while stirring occasionally. Add chopped black beans, vegetable stock and lime. Let simmer for an additional 5 minutes while stirring occasionally. Wrap corn tortillas in a damp paper towel, and heat up for 30 seconds to steam them. Spread approximately 3 tablespoons of olive oil to baking sheet, with flipping each tortilla two or three times to get a light coating of oil on each side. Spread some spinach black bean filling on each tortilla, and gently fold. Put them in the oven at 450 degrees for 13-16 minutes, take the cooking sheet out to flip them, and place them back in the oven for an additional 13-16 minutes. (Cook longer for more of a crisp) Let cool, and serve with fresh guacamole, salsa or a taco sauce of your liking.
