You can double the cornbread mixture, and add it directly over a fresh batch (just make sure its an oven-safe pot or dutch oven) Here’s how to make it: 1 box (8.5oz) Jiffy corn muffin mix 1/3 cup milk 1 egg 1 tbsp honey, optional 1 cup freshly shredded cheese, halved, optional 1/4 cup sour cream, optional Pinch of cayenne, optional Salt, optional Leftover chili Oven-safe skillet Butter, optional Toppings: cheddar cheese, sour cream, green onions, fresh or pickled jalapeño 1. Preheat oven to 400F. 2. In a medium mixing bowl, combine all ingredients for the cornbread mixture, half of your shredded cheese, honey, sour cream, cayenne, and salt. Mix well and let rest for about 5 minutes. 3. Add your leftover chili to an oven-safe skillet. Top with your remaining cheese followed by your cornbread mixture (I had about 1 cup leftover). 4.
