White Lasagna Soup! •2tbls butter •onion diced onion •3 cloves of minced garlic •2 tbls Italian seasoning •1 tsp salt •1/4 tsp pepper •calls for 3 cups chicken broth I ended up using 4 •2 boneless chicken breasts (I just ysed a rotisserie chicken to save time) •3 spoonfull of sundried tomato pesto (or you can use 1/4 cup sundried tomatoes) •2 handfuls of spinach •1 cup heavy whipping cream •2 cups short pasta or broken lasagna •2 tbls cornstarch •top with cheese of choice (ricotta, mozzarella, parmesan) -Add butter to a pan, melt, add onion until browned. Add garlic and seasonings cook for a minute. -Pour in chicken broth, scrape the bottom bits up for flavor and add tomato pesto (also add your chicken breast at this time if not using precooked chicken). -Bring soup to a simmer, or until chicken is cooked if not using precooked. -Boil pasta until al dente. -Remove chicken and shred. Or shred your rotisserie chicken. -Whisk together cream and cornstarch and add to soup and stir. Also add in the shredded chicken, cooked pasta and spinach.
