I felt like Magnum Loads would make a great tailgate bite (or meal because they are so meaty), so we seasoned them with our new Hail Mary seasoning that we partnered with the @dallascowboys on. 01:02My Mother in Law’s White Chicken Chili is a favorite in our family and makes for a simple weeknight meal. This can be done on a pellet grill or in a slow cooker. I prepare it in advance and simmer it all day on my @Traeger Grills. Another reason why I encourage everyone to add a pellet grill to their outdoor cooking arsenal regardless of your favorite type of cooker. Convenient, smoky, delicious. My recipes and chili seasoning are on MeatChurch.com (link in bio) but there are the basics: Ingredients • 3-4 C cooked chicken, chopped (preferably smoked) • 1 large white or yellow onion, chopped • 3 cans Great Northern Beans • 1, 32 oz carton chicken broth (or slightly less for a thicker soup) • can Rotel diced tomatoes & green chilies • 1, 10oz block of pepper jack cheese, cubed (sub your fav cheese if you don’t like the heat) • 2 tsp Cumin • 2 T Meat Church Texas Chili Seasoning Mix all ingredients in a dutch oven or slow cooker. Prepare your smoker at 225 using hickory or pecan wood. Place the dutch oven in the smoker. Cook for 3 - 4 hours uncovered, stirring at least every hour. Reduce heat, cover and simmer to hold until supper time. If using a slow cooker Cook on medium setting for 3 - 4 hours. You can increase to a hotter setting if time is not on your side as these ingredients are already cooked. You are simply trying to break down the chicken and meld the flavors. Top each serving with shredded cheese. 01:00Fried Pickle Dip. Being a pickle lover, this dip has become one of my favorite snacks at our tailgate parties. As usual this recipe is on MeatChurch.com where you can also get our seasonings and swag as well. Ingredients: • 1 C whipped cream cheese • 1 C sour cream • 1 C dill pickles, diced fine • 1 packet Ranch seasoning • ½ t onion powder • 1 lemon, juiced • 2 cloves garlic, grated • 2 T fresh dill, chopped (save some for garnish) • 2 T fresh chives, chopped • Meat Church Lemon Pepper seasoning • Thick potato chips or pretzels Topping: • ¾ C Panko (save some for garnish) • 1 t unsalted butter, melted Directions: • Melt butter in a pan over medium heat. • Add panko and toss completing coating in butter. • Cook until toasted. Traditionally crawfish are boiled in one pot. Once the crawfish boil and are cooked, the challenge with the one pot method is to keep from overcooking the crawfish while trying to soak up more flavor. Some people spray that pot with a water hose to cool it off and others dump ice into the pot which dilutes the seasoning. That method is fine, and the one I use most of the time. In this video we use a 2-pot method. Crawfish are boiled in clean water, which purges them, and are then dumped in a 140° flavored soak pot where they take on flavor and heat (if you added) without over cooking the crawfish. We realize not everyone has two pots, but if you have the tools, you will love the results from this method.
