Sardinia in Italy is one of the world's five blue zones, an area where a large number of people live to 100 or longer. This salad is inspired by the ingredients most popular in this region, like purple sweet potatoes, olive oil, and hazelnuts. Ingredients 1 onion, diced 1 large purple sweet potato, cubed 8-10 Brussels sprouts, chopped thin Salt and pepper to taste 1/2 tsp Dried basil 1/2 tsp Dried parsley 1/2 tsp dill 4 tbsp olive oil 4-5 chicken breast, pulled apart 1 tbsp oregano 1/2 tbsp tumeric 1 tsp Thyme 1 tsp Rosemary Cayenne pepper to taste 1 lemon, juiced 1/2 lemon, zest 1 Pink ridico, chopped 4 cups spinach, chopped 1/2 cup toasted hazelnuts, chopped Dressing 1 avocado 1 large lemon 1/4 cup oil 5 tbsp olive oil Handful of parsley 1 tbsp honey 1 tsp mustard Blend Instructions 1. Cook onion on medium heat until translucent. 2. Add purple potatoes, brussels sprouts, dill, basil, parsley, salt and pepper and cook for 10-13 minutes. 3. Preheat oven to 350. 4. Layer chicken on parchment paper and add cayenne pepper, lemon, lemon zest, oregano, turmeric, thyme, and rosemary. Cover in olive oil and add salt and pepper to taste. Bake chicken for 20 minutes. 5. While the chicken cooks, chop lettuce and ridico. 6. Combine dressing ingredients and mix in a blender. 7. Remove chicken from oven and use fork to pull apart. Chop hazelnuts. 8. Combine dressing and all ingredients and mix well! In the same pan add in the potato’s, salt, pepper, and garlic and sauté on medium high heat until cooked through. Spread around the bottom of the pan once cooled. 5.
