This recipe has been on repeat in my kitchen for spring! This refreshing salad is delicious and keeps you living longer! Sardinia in Italy is one of the world's five blue zones, an area where a large number of people live to 100 or longer. This salad is inspired by the ingredients most popular in this region, like purple sweet potatoes, olive oil, and hazelnuts. Ingredients 1 onion, diced 1 large purple sweet potato, cubed 8-10 Brussels sprouts, chopped thin Salt and pepper to taste 1/2 tsp Dried basil 1/2 tsp Dried parsley 1/2 tsp dill 4 tbsp olive oil 4-5 chicken breast, pulled apart 1 tbsp oregano 1/2 tbsp tumeric 1 tsp Thyme 1 tsp Rosemary Cayenne pepper to taste 1 lemon, juiced 1/2 lemon, zest 1 Pink ridico, chopped 4 cups spinach, chopped 1/2 cup toasted hazelnuts, chopped Dressing 1 avocado 1 large lemon 1/4 cup oil 5 tbsp olive oil Handful of parsley 1 tbsp honey 1 tsp mustard Blend Instructions 1. Cook onion on medium heat until translucent. 2. Add purple potatoes, brussels sprouts, dill, basil, parsley, salt and pepper and cook for 10-13 minutes. 3. Preheat oven to 350. 4. Layer chicken on parchment paper and add cayenne pepper, lemon, lemon zest, oregano, turmeric, thyme, and rosemary. Cover in olive oil and add salt and pepper to taste. Bake chicken for 20 minutes. 5. While the chicken cooks, chop lettuce and ridico. 6. Combine dressing ingredients and mix in a blender. 7. Remove chicken from oven and use fork to pull apart. Chop hazelnuts. 8. Combine dressing and all ingredients and mix well! As I’ve stepped into my 30s I’ve fully embraced myself 100%. I’ve embraced every part of me, the things I like and every imperfection I may have had in the past. I hold space for all parts of myself to show up and allow myself to send love to these parts of myself I may have hated or judged in the past. I’ve taken the time to learn and understand where these parts of me come from and to have empathy for the fact that when I learned these traits I was doing the best I could with the information I had learned up until that point in life. It is so beautiful and refreshing to live in a world where this is spoken about and where I can embrace myself fully. My word for 2024 has been authenticity and joy. Every day of this year I step into a more authentic version of myself and allow myself to be seen, not only in my personal life but within this community. Green Goddess Breakfast Scramble Need a good dose of greens, protein and healthy fats? This scramble is the perfect quick and easy plate to whip up when you’re in need of fiber, a leafy greens rich in iron, omega 3’s and 6’s. Add a slice of gluten free toast for the perfect added crunch! Getting in greens for your first meal is so important for hormone health and keeping insulin levels balanced as you start the day! Ingredients 1 shallot, diced 1 mini zucchini, or half of a normal, chopped 1/2 cup of kale, chopped 1 handful green beans, chopped 1 small handful basil, chopped 1 small handful dill, chopped 3 eggs, scrambled 2 tbsp olive oil Salt and pepper to taste 1 slice buckwheat toast, toasted 1 tsp thyme 1 tsp powered black garlic 1 tsp cayenne pepper Instructions 1. Add shallots and green beans to pan to simmer on medium heat for 10 minutes. 2. Add zucchini and cook another 5 minutes. 3. Add kale to pan and scramble eggs in separate bowl, combine with olive oil, thyme, and salt 4. Once kale is wilted, add eggs and top with herbs. Cook for 5 minutes on low heat. Toast bread and serve! Tip: Whenever cooking multiple vegetables add tougher vegetables first as they have a longer cook time!
