4. Wipe out pan, then add 1 tablespoon neutral oil, chopped ginger, chopped garlic, and sliced scallions and cook over medium heat until softened and very fragrant, about 3 minutes. Add 1 tablespoon water to pan if the mixture becomes too dry, then add your Lee Kum Kee Gluten-Free Soy Sauce, sesame oil, remaining sriracha mixture, and cooked quinoa to pan and stir until well combined.
5. Spoon some of the quinoa mixture onto each plate, then top with 1-2 squash halves and fill with more quinoa mixture. Squash Pies Ingredients: Filling 250 grams squash 4 egg yolks 135 grams sugar 50 ml molasses 125 ml heavy cream ginger nutmeg mace Crust 125 grams butter 75 grams rendered pig fat 200 grams all-purpose flour 50 grams rye flour 5 grams salt 25-50 ml cold water Whipped Cream 200 ml heavy cream 50 grams sugar 10 ml rose water Par-bake pie shells for 25 minutes at 350F. Cut and boil your squash until tender. Once cool, purée, and strain. Optionally, you may roast the purée at 400F for 20 minutes to further concentrate the flavors and drive off moisture. Meanwhile, combine eggs, sugar, and cream and whisk until light and fluffy. Then add spices, about 1/4 teaspoon each, or to taste, molasses, and the cooked squash. Spoon into pie shells and bake for an additional 25 minutes at 325F. Cool completely and serve with whipped cream and grated nutmeg. Please note, the squash depicted here is a Blue Hubbard. That particular squash variety did not become popular in America until the mid-20th century. I chose it for its intense flavor and color.
