Slowcooker Creamy Chicken & Chorizo Orzo 🍅 Creamy Orzo with Chicken, Sun-dried tomato & chorizo, kind of a crossover between pasta and a risotto vibe. A summer twist on one of my absolute favourite slowcooker pasta recipes. My other version of this recipe has been watched over 100M times so you know this is good. Ingredients - 3 x chicken breasts - 2 tbsp red pesto - 100g cooked chorizo - Handful of Sundried tomatoes 🍅 - 1 tbsp basil or mixed herbs - 4 garlic cloves - 100ml of chicken stock + 700ml for pasta - 230g of dry orzo - 200ml double cream - Handful of spinach or basil - Sweet peppers - Salt and pepper 1. Cook the chorizo briefly for 1 min 2. Add to the slowcooker with chicken, pesto, Sundried tomatoes, garlic, basil, 100ml of stock & salt and pepper 3. Cook on high for 2-3 hours or low for double that 4. Add in 230g of dry orzo, 700ml of stock & the peppers. Cook for a further 50 mins 5. Crockpot Chicken Spaghetti is an easy week night meal the whole family loves! 🔥 Recipe 2 chicken breasts 1/2 tsp each of salt and pepper 1 tsp each of onion powder and paprika 2 cans of cream of chicken soup 10 oz can of Rotel (not drained) 1 TBSP of minced garlic 2 cups of shredded cheese (I used Colby Jack) 1/4 cup of sour cream 1 lb of spaghetti Steps Spray a large crockpot with cooking spray. Add chicken breasts, seasonings, cream of chicken soup, and Rotel to a slow cooker and stir. Cook on low for about 4-6 hours. Once chicken is cooked shred chicken or cut it up into cubes and add it back to the crockpot. Stir in sour cream and shredded cheese. Cook spaghetti according to the directions on the package, drain, and add to slow cooker. Mix everything together well and serve. Enjoy! Slowcooker Chicken Curry & Noodles (442 cals a bowl) 🍛 Roughly £1.20 a portion - Slowcooker Summer Episode 3 One pot alert 🚨Curry once a week is a must in this house, I also love curry & noodles together. This is a real quick and dirty one but I honestly love it. Recipe makes 3-4 portions. Ingredients: - 3 x chicken breasts - 1 x can of light coconut milk - 1-2 x tbsp curry powder 🥄 - 1 x tbsp of turmeric 🥄 - 1 Tsp ginger, 1 tsp Chilli, 1 tsp Coriander 🌿 - 1/2 tsp of 5 Spice - 2 tbsp tomato purée 🍅 - 5 x cloves of garlic or lazy garlic - Salt & Pepper 🧂 - 1 x Onion 🧅 - 200g dry noodles -350ml of chicken stock 1. Cook the curry on high for 4 hours or low all day 2. Stir and add in 200g dry noodles, you can skip this step and cook them in a pot. 3. If adding the dry noodles to the same pot add 350ml+ of chicken stock and stir well. I never need to add cornflour to mine but if sauce hasn’t thickened add a tbsp. Close the lid and 15 mins on high. Whenever I use my slow cooker I feel like supermum 🦸🏼♀️ If you are a busy working parent, about to have a baby or renovating - you need to try making slow cooker dump bags! You can spend an afternoon doing this and have easy family dinners for weeks. Today I made: 3 x Beef Bourguignon, 3 x Turkey Chilli and 3 x Veggie Curry. My favourite is the beef beef bourguignon because it’s so simple with no pre cooking required. Save this recipe and let me know if you try it. 🥘 Recipe to make one dinner for 4-5 people (I bought ingredients x 3 the below): 500g stew meat 500g mushrooms 1 onion, diced ½ cup apple juice 1 tablespoon beef stock base (I like Knorr slow cooked beef stock) 2 teaspoons salt 1 teaspoon black pepper 2 cloves garlic, minced (I use a puree cause I’m lazy) Put all ingredients into a bag or container and when you need it - fully thaw and cook in your slow cooker on low for 8 hours (or if in a rush cook on high for 4 hours). Serve with mash, rice or noodles. Slowcooker Thai Red Chicken Curry 🍛 £1.85 per serving, 480 cals including rice noodles) This curry would cost you nearly £15 pp in Wagamama and here it’s made beyond simple in the slowcooker for a fraction of the price, loaded with flavour! Ingredients - 3 chicken breasts - 1 x onion 🧅 - Sugarsnap peas - 2-3 heaped tbsp red curry paste 🌶️ - 1 tbsp sriracha 🌶️ - Extra chilli if you want this hot - 1 can of coconut milk - 1 tbsp lazy garlic - 1 tbsp lazy ginger - 1 tbsp dark soy sauce - Juice of half a lime - 200g cooked noodles - 1 tbsp cornflour to thicken (optional) - Garnish - fresh coriander, chilli, lime Method 1. Throw everything into the slowcooker except the veg, noodles & garnish, cook on high for 3-4 hours or 6-7 on low. 2. Throw in veg for the last 20 min, add cornflour mixed with a tbsp of water to thicken only if required 3. Butter Chilli Chicken Curry (serves 4) 6 chicken thighs 30g butter 1 onion 3 cloves garlic 1 large green chilli 1 tbsp. ginger 2 heaped tbsp. Slowcooker Macaroni & Cheese Melt 🌶️ 🧀 497 cals If a Chilli Con Carne, Macaroni & Cheese had a baby this is what it would be. I cooked this on This Morning last week. Recipe from my new low prep, low calorie Slowcooker book EVEN EASIER currently £10📕 Serves: 5 Ingredients - 400g lean beef mince - 700g passata - 1 tbsp tomato purée - 3 garlic cloves, grated or chopped - Handful of fresh coriander, chopped, plus extra to garnish - 1 red chilli, sliced - 1 onion, chopped - 1 packet of chilli con carne spice mix (or you can make your own) - 700ml chicken stock - 400g tin of kidney beans, drained and rinsed - 1 red pepper, chopped - 250g dried macaroni - 120g Cheddar cheese (reduced fat if you can), grated Salt and pepper, to taste Method 1. Ideally brown the mince but if not, Add the beef mince, passata, tomato purée, garlic, half the coriander, the chilli, onion, chilli con carne spice mix and salt and pepper to the slow cooker. Cook on high for 4 hours or low for 7-8 hours. 2. Add the stock, kidney beans, red pepper and macaroni and cook on high for a further 45 minutes. If cooking on low, you'll need to leave it for closer to 1 hour to cook the pasta. 3.
