Marry Me Chicken Noodle Soup❤️💍 INGREDIENTS: -2 large carrots, chopped -3 celery stalks, chopped -1 yellow onion, chopped -1 small parsnip, chopped -8 garlic cloves, minced -6 tsp chicken bouillon -6 cups water -1/2 lb noodle of choice (I like small thick noodle for this recipe so I used tubetti rigati) -1 lb chicken (or 2 chicken breasts). You can also use rotisserie chicken if you want to skip cooking the chicken. -4-5 tbsp chopped sun dried tomatoes (I used ones from a jar) -4 tbsp tomato paste -1 tbsp of oil from the sun dried tomato jar -2 tbsp olive oil -1 tbsp butter -1/2 tsp dried oregano -1 tsp Italian seasoning -1 tsp dried parsley -1/2 tsp dried basil -1 tsp salt -1/2 tsp pepper -1/2 tsp red pepper flakes -3/4 cup cream -handful fresh parsley, chopped -handful of fresh basil, chopped -freshly grated parmesan cheese, to top DIRECTIONS: -Heat up 1 tbsp olive oil in a dutch oven or pot over medium high heat. Once pan is hot, add your chicken breasts (seasoned with a little salt and pepper). -Cook for about 3-4 minutes undisturbed before flipping. Cook the other side for about 3-4 minutes on medium/high heat, before turning heat down to medium/low to let the chicken cook through (maybe about 5 more minutes?) without burning the outside. Once chicken is cooked through (use a meat thermometer or cut into it to check), remove from heat and set aside. Once it cools, you will want to cut into small bite size pieces. You can also cube before cooking if you want it to cook faster. -Heat up 1 tbsp olive oil and 1 tbsp sun dried tomato oil in your pot you used to cook the chicken. -Once your pan is hot, sauté the onions for a minute or so before adding in the celery, carrots, and parsnip. Sprinkle a little salt on the veggies to help the reduce moisture. Saute for about 5 minutes or until they start to soften. -Create a space in the pan, add the butter and garlic directly into the butter. Cook for a few more minutes, stirring so garlic doesn’t burn. -Add in tomato paste. Crack Chicken Pasta 8 oz Rigatoni 2 large chicken breasts(cubed) 1/2 bacon 1/2 cup whole milk 1/4 cup heavy cream 2 oz room temp cream cheese 4 oz sour cream 2 oz cheese dip 2 oz shredded Colby Jack cheese 1 Tbsp Ranch seasoning 2 tsp garlic powder 1.5 tsp smoked paprika 1 tsp black pepper 1 tsp onion powder Cut up bacon and cook on med heat. While bacon is cooking cube up your chicken and season with SPG, and paprika. Remove bacon once crisp and cook chicken in remaining bacon grease until it reaches 165° internal then set aside. Turn heat to med-low, add milk, heavy cream, cream cheese, and sour cream. Stir until cream cheese melted then add cheese dip, seasonings, and shredded Colby Jack. One of our go-to weeknight dinners. These stuffed peppers are so simple and sooo good🤤 Save this for dinner inspo! Inspired by Dinner At The Zoo’s recipe 6 Bell Peppers 1 lb ground turkey breast Olive oil 2 onions— diced 6 cloves garlic— minced or finely chopped Tops of bell peppers (not stem)— chopped 1 cup *cooked* white rice Salt Pepper Italian Seasoning Oregano Fresh mozzarella log— shredded Fresh parsley- chopped Cooking spray Prep some rice in a rice cooker. Turn oven to 350 and wash bell peppers. Once dried, cut the tops off, remove ribs & seeds, and place cut side down in a baking dish pre sprayed with cooking spray. Add an inch of water into the dish, cover with foil and place in the oven for 20-25 minutes. Take peppers out and put on paper towel cut side down to dry. You do not want water in your peppers when you put filling! Wipe baking dish if there is left over water and add more cooking spray. Dice onion and tops of bell peppers, then mince or finely chop garlic. Shred mozzarella and set aside. Heat oil in a pan & add the onion and bell peppers. Cook for 3-4 minutes until softened. Add garlic & cook for 30 seconds-1 minute. Do not let garlic burn. Add ground turkey and salt & pepper. Break up meat with a spatula & wait for it to cook through. Add Italian seasoning & oregano. (I add a little dried parsley in there as well as the fresh parsley that will later go on top of the mozzarella.) Next add the cooked rice and tomato sauce and stir. Make sure to taste as you go! I prefer to over season rather than under, but the key to getting the best result is to taste and add as you go. Add half of the mozzarella & stir again until fully melted and combined. Put peppers back in baking dish & fill. Add the rest of the mozzarella on top. Cover with foil (covered with cooking spray as well so the cheese doesn’t stick). Bake for 20 minutes, then remove foil and add fresh parsley on top and then bake for another 10 until cheese is lightly browned. Rib eye + peppercorn sauce + baked potato and beer cheese + broccolini 🥩🥔🧀🍺 Steak (rib eye) * Pat dry, coat in olive oil, and coat each side generously in kosher salt and black pepper * Preheat grill to get it nice and hot (set to high heat, you want it around 450-500 degrees) * Place your steak directly on the grill, close cover, and let cook about 2 minutes. * After 2 minutes, rotate your steak 90 degrees while on same side (if you want grill marks). Close cover and let cook 2 more minutes. * Flip the steak and repeat above (cooking for another 4 min or so total on second side) * Use a meat thermometer to check temperature. I take off around 125 internal temp (med rare). * Total cook time will depend on size of steak but our took about 8-10 minutes. Grill cook times will vary depending on size of steak, so adjust accordingly. * After you remove from the grill, cover and let rest for about 5-10 minutes before slicing. Baked Potato * I used russet potatoes * Wash and pat dry * Poke holes all over the potato with a fork * Coat in olive oil and sprinkle with kosher salt * Line a baking sheet with tin foil. Roast in the oven at 425 for about 40-60 minutes (this will vary greatly depending on size of potato). * When serving, add the beer cheese and chives (recipe below) Beer Cheese: Ingredients: -3 tbs butter -3 tbsp flour -1 cup whole milk -8 oz beer -8 oz grated cheddar cheese -8 oz grated Monterey Jack cheese -1 tbsp Worcestershire sauce -spoonful of dijon musty -1/2 tsp salt -1/2 tsp pepper -1/2 tsp garlic powder -1/2 tsp onion powder -1/4 tsp paprika -a few tbsp freshly chopped chives *for the cheese, be sure to get a block and grate yourself. The pre-shredded cheese will not melt the same. Instructions: -Over medium heat, melt butter. Once butter is melted, add flour and mix/whisk well until it forms a roux (should be smooth and pasty consistency) -add beer and mix for a minute or so. It will foam up a bit and then some of it will cook off. -add milk and mix for another few minutes until combined and it starts to thicken -add mustard, Worcestershire sauce, and seasonings. -add cheese a little at a time and mix until melted. You can reduce heat to low. -let it continue to cook for about 5 minutes or so, stirring frequently. It should continue to thicken up. -right before serving, mix in chives Peppercorn Sauce: Ingredients: -1 tbsp olive oil -1/2 shallot, diced -4 cloves garlic, minced -2 tbsp crushed black peppercorns -1 tsp kosher salt -2 tbsp butter -1/2 cup whiskey -3/4 cup beef broth -1/2 cup heavy cream Instructions: -add olive oil to your pan and heat over medium heat -add shallots, salt them, and sauté for a few minutes until they begin to soften -add 1 tbsp butter and your garlic and sauté for a few more minutes, stirring so it doesn’t burn -add the peppercorns and sauté for another minute or so -add whiskey and bring to a simmer.
