Soup Series Part 1: Marry Me Chicken Noodle Soup 💍❤️ Ingredients: 3 large carrots, chopped 3 celery stalks, chopped 1 yellow onion, chopped 1 small parsnip, chopped 1/4 cup white wine 1 tbsp butter 8 garlic cloves, minced 6 tbsp tomato paste 6 tsp chicken bouillon 6 cups water 1/2 lb noodle of choice, cooked (I like small thick noodle for this recipe so l used tubetti rigati) 1 lb chicken (or 2 chicken breasts). You can also use rotisserie chicken if you want to skip cooking the chicken. 1 tbsp avocado oil (for cooking chicken) 4-5 tbsp chopped sun dried tomatoes (I used ones from a jar) 1 tbsp of oil from the sun dried tomato jar 1 tsp Italian seasoning 1/2 tsp dried parsley 1/2 tsp dried oregano 1/2 tsp dried basil 1/2 tsp salt 1/2 tsp pepper 1/2 tsp red pepper flakes 3/4 cup cream handful fresh parsley, chopped handful of fresh basil, chopped freshly grated parmesan cheese, to top Method: Slice chicken breasts in half and season. I used salt, pepper, garlic powder, and onion powder. In a large pot, cook chicken in avocado oil over medium high heat until cooked all the way through (I do about 3-4 min each side). Set aside and chop into bite size pieces. In a separate pot, boil some water and cook your pasta according to package (al dente). Strain and set aside. In the same pot you used to cook chicken, heat up 1 tbsp sun dried tomato oil over medium heat. Once your pan is hot, add onions and sauté for a minute or so before adding in the white wine. Deglaze the pan (scrape the bottom and let the wine cook off). Add in celery, carrots, and parsnip. Sprinkle a little salt on the veggies. Saute for about 5 min or until they start to soften. Create a space in the pan, add the butter and garlic directly into the butter. Cook for another minute, stirring so it does not burn. Add in tomato paste. Stir in and let cook for a few minutes or until the tomato paste starts to turn a slightly darker color before stirring in sun dried tomatoes and chicken bouillon. Add water and seasonings (salt, pepper, Italian seasoning, dried parsley, dried basil, dried oregano, red pepper flakes). Bring to a boil, reduce to a simmer, cover, and let cook for about 10 min. Creamy Chicken Noodle Soup with Potatoes 🤩 I saw @Alyssa Alonso make a version of this last year, and I’ve been making this ever since. Here’s how:
2 T butter 2 T olive oil 2 chicken breasts, seasoned 1/2 large yellow onion, diced 3 stalks celery, diced 2-3 large carrots, diced 1 T Italian seasoning 1 tsp red pepper flakes, to taste
Salt and pepper, to taste 8-10 cloves garlic, minced
1/2 cup dry white wine, optional 6 cups chicken broth 2-3 cups diced Yukon gold potatoes 1-2 tsp chicken boullion, optional 1 Parmesan rind, optional 1 bay leaf 1/2 - 1 cup heavy cream, to taste Juice of 1/2 lemon 1/4 cup fresh parsley, to taste 2 T fresh dill, to taste 1 T fresh rosemary, to taste 1 T fresh thyme, to taste
1 lb egg noodles, cooked separately
Garnish: Freshly grated Parmesan, lemon juice, fresh dill, black pepper, red pepper, olive oil 1. Cook the egg noodles in salted water according to package instructions. Drain and set aside.
2. In a large soup pot or Dutch oven, heat 1 tbsp butter and 1 tbsp olive oil over medium-high heat. Sear the chicken breasts on both sides until golden, about 3-4 minutes per side, then remove them from the pot and set aside. 3. Add the remaining olive oil and butter to the pot. Lower the heat to medium, then add the onion, celery, and carrot. Season with salt, pepper, Italian seasoning, and red pepper flakes (if using), and sauté for 5-7 minutes until the vegetables are softened. 4. Add the garlic and cook for another 30 seconds until fragrant. Pour in the wine, if using, stir and let simmer for 2 minutes. 5. Pour in the chicken broth, season with salt and pepper.
6. Add the diced potatoes, chicken bouillon, Parmesan rind, and bay leaf. Stir to combine, then return the seared chicken breasts to the pot. 7. Bring the mixture to a boil and simmer for 15-20 minutes, until the potatoes are fork-tender. 8. Remove the chicken breasts from the pot, shred them using two forks, and set aside. 9. Check the potatoes to ensure they’re done, then remove the Parmesan rind and bay leaf. 10. Stir in the heavy cream and lemon juice, followed by the parsley, dill, rosemary, and thyme. 11. Return the shredded chicken to the pot, taste for seasoning, and adjust as needed. 12. Serve the soup over the cooked egg noodles, topping each bowl with additional Parmesan, lemon juice, black pepper, red pepper flakes, dill, and a drizzle of olive oil. In a large pot or dutch oven, cook bacon over medium heat until crispy. Remove with a slotted spoon and set aside. *Carefully* soak up the bacon grease with a paper towel, leaving about 2T behind. 2. Add in your butter and onion, sautéing for about 5 minutes or until your onions soften. Throw in your garlic and cook for about 30s or until fragrant. 3. Add in your flour and stir for about 1min 4. Slowly whisk in your heavy cream and milk, working in batches (about a 1/3 at a time). Repeat with your chicken broth. Season with your salt, pepper, chicken bouillon, and cayenne. Stir to combine. 5. Add in your potatoes and bring to a boil. Boil until fork tender, about 15 minutes. 6. Reduce heat to medium-low. Add in your cheddar cheese and bacon (leaving aside a few T of each for topping), stir until melted. 7. With a potato masher, immersion blender or whatever you have on hand, mash your potatoes until desired consistency. 8. Serve immediately and top with more cheese, sour cream, bacon, and green onions. In a large pot, over medium heat, melt butter and heat olive oil. 3. Once butter is melted add in celery and cook for about 5-7 minutes until soft. 4. Add in garlic and stir. Let cook for 2 minutes. 6. Add in carrots. Season with salt, pepper, onion powder, and Italian seasoning. 7. Add in flour. Stir for 2 mins until everything is combined. 9. Once chicken is cooked through (use a meat thermometer or cut into it to check), remove from heat and set aside. Once it cools, you will want to cut into small bite size pieces. You can also cube before cooking if you want it to cook faster. -Heat up 1 tbsp olive oil and 1 tbsp sun dried tomato oil in your pot you used to cook the chicken. -Once your pan is hot, sauté the onions for a minute or so before adding in the celery, carrots, and parsnip. Sprinkle a little salt on the veggies to help the reduce moisture. Saute for about 5 minutes or until they start to soften. -Create a space in the pan, add the butter and garlic directly into the butter. Cook for a few more minutes, stirring so garlic doesn’t burn. -Add in tomato paste. Pasta e Fagioli aka Stanley Tucci’s favorite soup 🫘🥣 I went ahead and added some ground beef to this, but you can use whatever protein you like, or keep it vegetarian. Either way, just make sure to add plenty of parmesan and lemon! Here’s how to make it: * 2 tbsp olive oil * 1 medium onion, diced * 2 medium carrots, diced * 2 celery stalks, diced * 8 cloves garlic, minced, to taste * 1 tsp dried oregano * 1 tsp dried thyme * 1 tsp red pepper flakes (optional) * Salt and pepper, to taste * 1 lb ground beef, optional * 2-3 tbsp tomato paste * 6 cups beef broth (can use chicken or vegetable broth if preferred) * 24 oz Rao’s marinara sauce * 2 (15 oz) can cannellini beans, drained and rinsed * 1 bay leaf * 1 parmesan rind (optional) * 1 cup ditalini pasta * 1 bunch or about 2 cups kale, chopped, stems removed * Juice from 1/2 lemon (to taste, plus more for garnish) * Grated Parmesan, for garnish * Fresh chives, chopped, for garnish (or preferred herb) * Freshly cracked black pepper, for garnish * Extra virgin olive oil, for drizzling * Lemon wedges, for serving 1. In a large pot, heat olive oil over medium heat. Add the onions, carrots, and celery. Season with salt, pepper, oregano, thyme, and red pepper flakes. Sauté for 6-8 minutes until softened. 2. Add in your garlic and cook for another 30 seconds. 3. Clear a center in your pot and add the ground beef. Broccoli Cheddar Soup! 🥦🧀🥣 This was by far the most suggested soup & you guys were right because it was SO good. If I made this again I would add some potatoes and bacon, but it was delish as is. Let me know your other suggestions for the series! Ingredients 1/4 cup butter 1 medium yellow onion, diced 6 cloves minced garlic (to taste) 1/4 cup flour 2 cups chicken broth 1 large head of broccoli, chopped and rinsed 1/2 cup shredded carrots 1.5t salt 1.5t black pepper 1t chicken bouillon (to taste) 1/2t paprika (smoked would work here too) Pinch of cayenne (about 1/8 teaspoon) Pinch of nutmeg (about 1/8 teaspoon) 2 cups heavy cream or half & half 2.5 cups freshly shredded sharp cheddar (more or less to taste, plus a little extra for topping) Instructions 1. In a large dutch oven, melt butter over medium heat. Add in your onions and cook for a few minutes, or until they begin to soften. Throw in your garlic and stir for another 30seconds, or until fragrant. 2. Add in your flour and stir continuously for 1min. Slowly pour in half of your chicken broth, stir to combine, repeat. Season with your seasonings. 3. Add in your broccoli and carrots. Stir to combine and bring to a simmer. Reduce heat to med/low, cover, and cook for about 10-15minutes or until your veggies are tender. 4. Reduce heat to low and stir in your cream. Simmer for a 3-4 minutes. 5. Add in your cheese and stir until melted. Top with extra cheese and serve with toasted bread. Soup Series Part 4: Thai inspired red curry chicken soup Ingredients: 2 chicken breasts, cut into bite size pieces Seasonings for cooking chicken (I used salt, pepper, onion powder, garlic powder) 5 oz rice noodles 2 tbsp neutral oil 1 yellow onion, diced 1 red bell pepper, chopped 3 carrots, chopped 6 garlic cloves, minced 2 tsp ginger, grated 1 tbsp lemongrass paste 2 tbsp miso paste 4 tbsp red curry paste 5 cups chicken stock 1 can coconut milk 1 tbsp oyster sauce Cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) Large handful of cilantro, chopped (plus some extra for serving) Large handful green onions, chopped Juice of 1 lime A few slices of jalapeño (for serving) Method: -In a dutch oven or stock pot, start by cooking your chicken in 1 tbsp oil over medium /high heat. I season with salt, pepper, garlic powder, and onion powder. Stir occasionally. Cook time should be about 4-5 minutes or so. Once it’s done, set aside. -In the same pot, heat up 1 tbsp oil over medium heat. Add your onions and sauté for a few minutes, stirring occasionally. Season with a little salt. -Add your bell pepper and carrots, and sauté for a few more minutes or until the veggies start to soften. -Create a space in the pan and add your garlic, ginger, lemongrass paste, miso paste, and curry paste. Sauté for a few minutes or so, stirring frequently. -Add chicken stock, coconut milk, and oyster sauce. Stir until combined. Bring soup to a boil, reduce to simmer, and cover for about 10-15 minutes. -Add in your cornstarch slurry and stir well. -Add noodles and cooked chicken. Soup Series Part 1: Marry Me Chicken Noodle Soup 💍❤️ Ingredients: 3 large carrots, chopped 3 celery stalks, chopped 1 yellow onion, chopped 1 small parsnip, chopped 1/4 cup white wine 1 tbsp butter 8 garlic cloves, minced 6 tbsp tomato paste 6 tsp chicken bouillon 6 cups water 1/2 lb noodle of choice, cooked (I like small thick noodle for this recipe so l used tubetti rigati) 1 lb chicken (or 2 chicken breasts). You can also use rotisserie chicken if you want to skip cooking the chicken. 1 tbsp avocado oil (for cooking chicken) 4-5 tbsp chopped sun dried tomatoes (I used ones from a jar) 1 tbsp of oil from the sun dried tomato jar 1 tsp Italian seasoning 1/2 tsp dried parsley 1/2 tsp dried oregano 1/2 tsp dried basil 1/2 tsp salt 1/2 tsp pepper 1/2 tsp red pepper flakes 3/4 cup cream handful fresh parsley, chopped handful of fresh basil, chopped freshly grated parmesan cheese, to top Method: Slice chicken breasts in half and season. I used salt, pepper, garlic powder, and onion powder. In a large pot, cook chicken in avocado oil over medium high heat until cooked all the way through (I do about 3-4 min each side). Set aside and chop into bite size pieces. In a separate pot, boil some water and cook your pasta according to package (al dente). Strain and set aside. In the same pot you used to cook chicken, heat up 1 tbsp sun dried tomato oil over medium heat. Once your pan is hot, add onions and sauté for a minute or so before adding in the white wine. Deglaze the pan (scrape the bottom and let the wine cook off). Add in celery, carrots, and parsnip. Sprinkle a little salt on the veggies. Saute for about 5 min or until they start to soften. Create a space in the pan, add the butter and garlic directly into the butter. Cook for another minute, stirring so it does not burn. Add in tomato paste. Stir in and let cook for a few minutes or until the tomato paste starts to turn a slightly darker color before stirring in sun dried tomatoes and chicken bouillon. Add water and seasonings (salt, pepper, Italian seasoning, dried parsley, dried basil, dried oregano, red pepper flakes). Bring to a boil, reduce to a simmer, cover, and let cook for about 10 min. Creamy Chicken Noodle Soup with Potatoes 🤩 I saw @Alyssa Alonso make a version of this last year, and I’ve been making this ever since. Here’s how:
2 T butter 2 T olive oil 2 chicken breasts, seasoned 1/2 large yellow onion, diced 3 stalks celery, diced 2-3 large carrots, diced 1 T Italian seasoning 1 tsp red pepper flakes, to taste
Salt and pepper, to taste 8-10 cloves garlic, minced
1/2 cup dry white wine, optional 6 cups chicken broth 2-3 cups diced Yukon gold potatoes 1-2 tsp chicken boullion, optional 1 Parmesan rind, optional 1 bay leaf 1/2 - 1 cup heavy cream, to taste Juice of 1/2 lemon 1/4 cup fresh parsley, to taste 2 T fresh dill, to taste 1 T fresh rosemary, to taste 1 T fresh thyme, to taste
1 lb egg noodles, cooked separately
Garnish: Freshly grated Parmesan, lemon juice, fresh dill, black pepper, red pepper, olive oil 1. Cook the egg noodles in salted water according to package instructions. Drain and set aside.
2. In a large soup pot or Dutch oven, heat 1 tbsp butter and 1 tbsp olive oil over medium-high heat. Sear the chicken breasts on both sides until golden, about 3-4 minutes per side, then remove them from the pot and set aside. 3. Add the remaining olive oil and butter to the pot. Lower the heat to medium, then add the onion, celery, and carrot. Season with salt, pepper, Italian seasoning, and red pepper flakes (if using), and sauté for 5-7 minutes until the vegetables are softened. 4. Add the garlic and cook for another 30 seconds until fragrant. Pour in the wine, if using, stir and let simmer for 2 minutes. 5. Pour in the chicken broth, season with salt and pepper.
6. Add the diced potatoes, chicken bouillon, Parmesan rind, and bay leaf. Stir to combine, then return the seared chicken breasts to the pot. 7. Bring the mixture to a boil and simmer for 15-20 minutes, until the potatoes are fork-tender. 8. Remove the chicken breasts from the pot, shred them using two forks, and set aside. 9. Check the potatoes to ensure they’re done, then remove the Parmesan rind and bay leaf. 10. Stir in the heavy cream and lemon juice, followed by the parsley, dill, rosemary, and thyme. 11. Return the shredded chicken to the pot, taste for seasoning, and adjust as needed. 12. Serve the soup over the cooked egg noodles, topping each bowl with additional Parmesan, lemon juice, black pepper, red pepper flakes, dill, and a drizzle of olive oil. In a large pot or dutch oven, cook bacon over medium heat until crispy. Remove with a slotted spoon and set aside. *Carefully* soak up the bacon grease with a paper towel, leaving about 2T behind. 2. Add in your butter and onion, sautéing for about 5 minutes or until your onions soften. Throw in your garlic and cook for about 30s or until fragrant. 3. Add in your flour and stir for about 1min 4. Slowly whisk in your heavy cream and milk, working in batches (about a 1/3 at a time). Repeat with your chicken broth. Season with your salt, pepper, chicken bouillon, and cayenne. Stir to combine. 5. Add in your potatoes and bring to a boil. Boil until fork tender, about 15 minutes. 6. Reduce heat to medium-low. Add in your cheddar cheese and bacon (leaving aside a few T of each for topping), stir until melted. 7. With a potato masher, immersion blender or whatever you have on hand, mash your potatoes until desired consistency. 8. Serve immediately and top with more cheese, sour cream, bacon, and green onions. Sprinkle a little salt on the veggies to help the reduce moisture. Saute for about 5 minutes or until they start to soften. -Create a space in the pan, add the butter and garlic directly into the butter. Cook for a few more minutes, stirring so garlic doesn’t burn. -Add in tomato paste. Pasta e Fagioli aka Stanley Tucci’s favorite soup 🫘🥣 I went ahead and added some ground beef to this, but you can use whatever protein you like, or keep it vegetarian. Either way, just make sure to add plenty of parmesan and lemon! Here’s how to make it: * 2 tbsp olive oil * 1 medium onion, diced * 2 medium carrots, diced * 2 celery stalks, diced * 8 cloves garlic, minced, to taste * 1 tsp dried oregano * 1 tsp dried thyme * 1 tsp red pepper flakes (optional) * Salt and pepper, to taste * 1 lb ground beef, optional * 2-3 tbsp tomato paste * 6 cups beef broth (can use chicken or vegetable broth if preferred) * 24 oz Rao’s marinara sauce * 2 (15 oz) can cannellini beans, drained and rinsed * 1 bay leaf * 1 parmesan rind (optional) * 1 cup ditalini pasta * 1 bunch or about 2 cups kale, chopped, stems removed * Juice from 1/2 lemon (to taste, plus more for garnish) * Grated Parmesan, for garnish * Fresh chives, chopped, for garnish (or preferred herb) * Freshly cracked black pepper, for garnish * Extra virgin olive oil, for drizzling * Lemon wedges, for serving 1. In a large pot, heat olive oil over medium heat. Add the onions, carrots, and celery. Season with salt, pepper, oregano, thyme, and red pepper flakes. Sauté for 6-8 minutes until softened. 2. Add in your garlic and cook for another 30 seconds. 3. Clear a center in your pot and add the ground beef. Season with more salt and pepper, and cook until browned, breaking it up as it cooks, about 5-7 minutes. 4. Stir in the tomato paste and cook for another 1-2 minutes to caramelize it slightly. 5. Add the broth, marinara, beans, bay leaf, and parmesan rind. Stir everything together, bring to a boil, and then lower to a simmer. Let it simmer for about 30 minutes, uncovered, stirring occasionally to develop the flavors. 6. After 30 minutes, add the ditalini pasta and cook for 8-10 minutes, until al dente. 7. In the last 5 minutes of cooking the pasta, stir in the chopped kale. Allow it to wilt and soften into the soup. 8. Stir in fresh lemon juice to taste, adjusting seasoning with more salt and pepper if needed. 9. Ladle the soup into bowls and top with freshly grated Parmesan, chopped chives, freshly cracked black pepper, a drizzle of extra virgin olive oil, and a squeeze of lemon juice. Broccoli Cheddar Soup! 🥦🧀🥣 This was by far the most suggested soup & you guys were right because it was SO good. If I made this again I would add some potatoes and bacon, but it was delish as is. Let me know your other suggestions for the series! Ingredients 1/4 cup butter 1 medium yellow onion, diced 6 cloves minced garlic (to taste) 1/4 cup flour 2 cups chicken broth 1 large head of broccoli, chopped and rinsed 1/2 cup shredded carrots 1.5t salt 1.5t black pepper 1t chicken bouillon (to taste) 1/2t paprika (smoked would work here too) Pinch of cayenne (about 1/8 teaspoon) Pinch of nutmeg (about 1/8 teaspoon) 2 cups heavy cream or half & half 2.5 cups freshly shredded sharp cheddar (more or less to taste, plus a little extra for topping) Instructions 1. In a large dutch oven, melt butter over medium heat. Add in your onions and cook for a few minutes, or until they begin to soften. Throw in your garlic and stir for another 30seconds, or until fragrant. 2. Add in your flour and stir continuously for 1min. Slowly pour in half of your chicken broth, stir to combine, repeat. Season with your seasonings. 3. Add in your broccoli and carrots. Stir to combine and bring to a simmer. Reduce heat to med/low, cover, and cook for about 10-15minutes or until your veggies are tender. 4. Reduce heat to low and stir in your cream. Simmer for a 3-4 minutes. 5. Add in your cheese and stir until melted. Top with extra cheese and serve with toasted bread. Soup Series Part 4: Thai inspired red curry chicken soup Ingredients: 2 chicken breasts, cut into bite size pieces Seasonings for cooking chicken (I used salt, pepper, onion powder, garlic powder) 5 oz rice noodles 2 tbsp neutral oil 1 yellow onion, diced 1 red bell pepper, chopped 3 carrots, chopped 6 garlic cloves, minced 2 tsp ginger, grated 1 tbsp lemongrass paste 2 tbsp miso paste 4 tbsp red curry paste 5 cups chicken stock 1 can coconut milk 1 tbsp oyster sauce Cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) Large handful of cilantro, chopped (plus some extra for serving) Large handful green onions, chopped Juice of 1 lime A few slices of jalapeño (for serving) Method: -In a dutch oven or stock pot, start by cooking your chicken in 1 tbsp oil over medium /high heat. I season with salt, pepper, garlic powder, and onion powder. Stir occasionally. Cook time should be about 4-5 minutes or so. Once it’s done, set aside. -In the same pot, heat up 1 tbsp oil over medium heat. Add your onions and sauté for a few minutes, stirring occasionally. Season with a little salt. -Add your bell pepper and carrots, and sauté for a few more minutes or until the veggies start to soften. -Create a space in the pan and add your garlic, ginger, lemongrass paste, miso paste, and curry paste. Sauté for a few minutes or so, stirring frequently. -Add chicken stock, coconut milk, and oyster sauce. Stir until combined. Bring soup to a boil, reduce to simmer, and cover for about 10-15 minutes. -Add in your cornstarch slurry and stir well. -Add noodles and cooked chicken. Tuscan White Bean & Sausage Soup ❤️🔥 1 lb Italian sausage (or preferred protein) 1 medium onion, finely diced 2 medium carrots, finely diced 2 celery stalks, finely diced diced 2 tsp Italian seasoning
1 tsp calabrian chili (optional) 6 garlic cloves, minced (to taste) 1 tbsp fresh thyme, chopped 1 tbsp fresh rosemary, chopped 3 tbsp tomato paste 1/2 cup dry white wine (optional) 4 cups low-sodium chicken broth 2 (15 oz) cans cannellini or Great Northern beans, drained and rinsed Parmesan rind (optional) Bay leaf 1/2 cup sun-dried tomatoes (to taste) Freshly grated parmesan (about 1 cup) 1/2 cup half and half or cream 2-3 cups fresh spinach or kale Lemon juice, to garnish Crusty bread to dip 1. In a large pot, heat about 1 tbsp of sun-dried tomato oil over medium heat. Sauté the diced onion, celery, and carrot with salt, pepper, Italian seasoning, and calabrian chili for a few minutes. 2. Clear a center in the pot and add your preferred protein. Allow a crust to form, then flip and break up with a wooden spoon. Cook through and combine with the veggies. 3. Add the thyme, rosemary, and minced garlic. Stir and cook for another minute. 4. Clear a center in the pot again and add the tomato paste. Let it cook in the pan for 1-2 minutes before stirring with the rest of the ingredients. Stir and cook for another minute or two. 5. Deglaze with white wine, scraping up any brown bits on the bottom. Let it simmer for 1-2 minutes. 6. Pour in the beans and chicken broth, and season with salt and pepper to taste. Bring to a boil, then reduce heat to low. 7. Add in the parmesan rind and bay leaf. Cover and simmer for 20 minutes. 8. After 20 minutes, discard the bay leaf and parmesan rind (if you can find it) and finish with the sun-dried tomatoes, parmesan cheese, half-and-half, and spinach. Stir until the spinach is wilted. 9. Serve and top with more parmesan, lemon juice, and black pepper. 2. Add your butter to the pot. Stir in your onions, salt, pepper, paprika, and cayenne. Cook until the onions start to soften, about 5 minutes.
3. Add in your garlic, stirring for 30 seconds until fragrant.
4. Sprinkle in the flour and stir well. Cook for about 2 minutes.
5. Slowly pour in half of your chicken broth, stirring to combine, then add the rest. If the base seems too thick, add in the third cup of broth.
6. Add in your broccoli, carrots, and chicken bouillon. Stir and bring the soup to a simmer. Cover, reduce heat, and let it simmer for about 10-15 minutes, or until the veggies are tender.
7. Turn off the heat and pour in your cream, stirring well.
8. Add in your cheese, stirring until melted.

Stir in the Minute Instant Rice, cover, and simmer for 5 minutes. 7. While the rice is being heated, whisk together the eggs and lemon juice in a separate bowl. Slowly add in two ladles of hot broth, whisking continuously to temper the eggs and prevent scrambling. 8. Once the rice is prepared, turn off the heat and/or remove the pot from the heat. Recipe is from @jzeats 💖 Ingredients: * 4 boneless, skinless chicken breasts * 1 yellow onion, chopped * 1 jalapeno, diced * 4 cups chicken bone broth * 1.5 cups sour cream * 1/2 cup shredded monterey jack cheese, (I used a blend of monterey jack and mild cheddar) * 4 cloves of garlic, minced * 1/2 tablespoon dried oregano * 1/2 teaspoon chili powder * 2 cups frozen sweet white corn * 1/2 cup fresh cilantro, chopped * 1 lime, juice * 3 tablespoons cornstarch * 3 tablespoons water * olive oil * cotija cheese * bacon crumbles * tortilla strips * sliced avocado Directions: 1. In a large soup pot heat 1 tablespoon of olive oil. Add onion, jalapeño, and sauté until softened. Add garlic, oregano, chili powder, and stir until combined. 2. Add broth, chicken, salt, and pepper. Bring to a boil. Reduce heat, cover, and simmer for 15 minutes or until the chicken is cooked. 3. Transfer cooked thin to a bowl and shred with forks. Add back into the pot. Can you believe this soup has 75 grams of protein? You can easily divide this into 3, 4, or 5 servings. For 4 super filling servings, it has 200 calories and 19g protein per serving. Instead of using cream, I went with cottage cheese to pack in that creamy texture and a protein boost, and added bone broth for another 20g protein. Besides protein, you can sneak in a ton of veggies. I promise, you don’t taste the cottage cheese. Here is how I made it: 1️⃣ Preheat your oven to 410°F.
2️⃣ Cut 1 large butternut squash (or 2 honey nut squash like I did) in half and scoop out the seeds. Carefully score the flesh with a knife to help it cook evenly and soak up all those spices. Place it on a large baking tray.
3️⃣ Add 1 large red onion, cut into eighths, to the tray.
4️⃣ Grab 12-14 mini red peppers (or 2 red bell peppers), slice in half, remove seeds, and add to the tray.
5️⃣ Drizzle or spray 1 tbsp oil, 1 tbsp onion powder, 1 tbsp thyme, and 1 tbsp smoked paprika over the veggies.
6️⃣ Slice the top off an onion bulb, drizzle with 1 tbsp olive oil, wrap in foil or parchment, and add to the tray. Roast everything at 410°F for 45-50 minutes.
7️⃣ Once roasted, scoop the squash away from the skin, then toss it in a blender with the roasted onion and peppers. Squeeze out the garlic from the bulb and add that in too.
8️⃣ Pour in 17 oz bone broth (chicken, veggie, or beef—your choice) and 3.5 servings of cottage cheese (around 3/4 of a tub).
9️⃣ Blend until it’s super creamy and smooth.
🔟 Serve it up hot or save for later! 💥 Olive Garden Copycat Pasta Fagioli Soup! To be honest…its better!! ¿Y Por Qué No? Share this recipe with someone who would love this 🤓 This is a simple one pot dish and it comes out SO freakin good and is INSANELY easy to make. Here is how I made it: 1. First start off by browning your lean ground meat. I used 1 1/2 pounds of 96% * carrots 🥕 * 1 tablespoon of oregano 🌿 * 1 tablespoon of basil 🌿 * 1 tablespoon of Italian seasoning 🌿 * 1 tablespoon of tomato paste 🍅 * 2 15oz cans of petite tomatoes 🥫🥫 * 1 small can of tomato🥫 sauce * 2 cups of chicken broth * 1 tablespoon of white sugar and mix everything together. Let it come to a simmer and add * 1 15oz can of cannellini beans 🫘 * 1 15oz can of kidney beans 🫘 * 1 bay leaf 🍃 mix well. * Cover and allow to simmer on low heat for the next 30 minutes. 3. Cook 1/2 pound of Ditalini pasta separately with plenty of salt for 7 minutes. Remove and rinse with cold water to stop the cooking process. 4. Once your soup has been cooking on low heat for 30 minutes add in your pasta (I added 2 cups of cooked pasta) add more or less if you like. That’s to your liking. 5. Deconstructed Wonton Soup 🥟 Inspired by Eat Figs Not Pigs Meatballs: 1 lb ground pork 4 stalks green onion, diced (plus more for garnish) 2 tsp grated ginger 3 cloves grated garlic 2 tbsp soy sauce 2 tsp sesame oil 2 tsp rice vinegar 1 tsp white pepper 2 tbsp cornstarch Broth: 6 cups chicken broth (@Kettle & Fire) 5-6 cloves garlic, smashed (to taste) 1-inch piece ginger, sliced 1 onion, quartered 1 tbsp lemongrass paste (can use fresh) 1-2 tbsp soy sauce (to taste) 1 tbsp sesame oil (to taste) 1 tbsp rice vinegar (to taste) 1 tsp white pepper Pinch of salt (to taste) 1-2 teaspoons fish sauce (optional) 16-20 wonton wrappers, cut in 4 6 baby bok choy, rinsed and chopped Chili oil (for garnish) I used @Momofuku 1. In a mixing bowl, combine the ground pork, green onion, ginger, garlic, soy sauce, sesame oil, white pepper, rice vinegar, and cornstarch. Mix until just combined and form into small meatballs, about 1 inch in diameter. Set aside. 2. In a large pot, heat about 1 tbsp of sesame oil over medium heat. Add the onion, smashed garlic, sliced ginger, and lemongrass paste. Sauté for 3-4 minutes, until the aromatics are fragrant. (you might need to add a drizzle of olive oil to prevent burning) 3. Pour in the chicken broth and season with soy sauce, rice vinegar, sesame oil, white pepper, pinch of salt, and fish sauce (if using). Bring to a boil, then reduce heat and simmer for 20 min. 4. Strain the broth to remove the onion, garlic and ginger. 5. Return the broth to the pot and bring it back to a simmer. Gently drop the meatballs into the broth and let them cook for about 10-15 minutes, or until cooked through and float to the top. 6. Gently drop in the wonton wrappers in batches, and let them cook for about 3-5 minutes, or until they float to the top. Add the bok choy and let cook for another 2-3 minutes, until wilted but still retains some texture. 7. Taste and adjust seasoning as needed (soy sauce, rice vinegar, chili oil, fish sauce, etc.) 8. Serve and garnish with a drizzle of chili oil and green onions.
