Last minute change of plans but SO happy with how this turned out! FULL RECIPES BELOW🤍🎃🍁 Fall Inspired Pasta - 1 package Fall Zucchette Pasta (I made 4 servings) - chicken sausage (I used 6 links) - Green beans - 1 red onion - 1/4 cup pesto - Olive oil, garlic salt & 21 seasoning salute (optional) to taste - Goat cheese for topping Chop veggies and chicken sausage and season with olive oil, garlic salt and TJ’s 21 seasoning salute (if desired). Place in air fryer at 400 degrees for 15-20 minutes or until done. While veggies and sausage are cooking, cook pasta according to package instructions. Once everything is done, combine in a large bowl and add pesto. Mix well. Place in meal prep containers and top with goat cheese. Enjoy! Fall Crispy Date Bites - 1 pack medjool dates (pitted) - 1 cup rice crispy cereal - 1/3 cup chopped pumpkin spiced pumpkin seeds (not necessary if you don’t have a Trader Joe’s) - 1/2 cup nut butter of choice - 1/4 cup honey - 1-2 tsp pumpkin spice seasoning to taste - 1 bar of dark chocolate - 1 tsp coconut oil - Sea salt for topping Combine cereal, pumpkin seeds, nut butter, honey, and pumpkin spice seasoning in a bowl and mix until combined. Split dates open and fill with above mixture. Melt chocolate & coconut oil and drizzle on top. $10 Easy Dollar Tree Meal Prep (12 Meals for $10 = 0.83 each!) The shopping list: Penne pasta $1.25 Pasta sauce $1.25 Hashbrowns (or steak cut french fries) $1.25 Smoked sausage $1.25 Pepper Stir fry $1.25 Chili $1.25 Italian Meatballs $1.25 Velveeta Cheese sauce $1.25 Total cost $10 Meal Prep Step by Step Guide: Boil entire box of penne pasta, drain, and toss pasta in some oil to prevent sticking. Split pasta evenly between 9 containers and set aside. Rehydrate hashbrowns in hot water per box instructions, then add 1/4 cup of oil to a large skillet on medium high heat. Drain hashbrowns and fry for 12 minutes, flipping halfway through. Divide hashbrowns between 3 containers and set aside. Thaw pepper stir fry, chop and drain. Chop smoked sausage into rounds. Fry peppers and sausage together until brown. Add 1/2 a cup of the sausage and pepper mixture to two of the hashbrown containers and two of the pasta containers. Thaw meatballs and mince into small pieces for a meat sauce. Sautee over medium heat until browned, stir in pasta sauce and allow to heat through. Add 1/2 a cup of the meat sauce to 5 of the pasta containers. Open chili and stir. Add 1/2 a cup of chili to each of two of the pasta containers and the final hashbrown container. Mix velveeta cheese sauce with 1/4 cup of warm water, add a small amount to each of the containers with chili and split the majority of the sauce over the two pasta containers that have smoked sausage and peppers. Allow to cool completely, and chill in the fridge for up to 5 days or freeze. Reheating: Microwave for 90 seconds if refrigerated. If frozen, defrost first then microwave until heated through. Ingredients for the beef: * 1 & 1/2 pounds ground beef (90/10) * 2 tablespoons mustard
4 medium onions, diced (500g)
Ingredients for the sauce: * 7 & 1/2 tablespoons light mayo (112g) * 2 & 1/2 tablespoons ketchup (42g) * 1 teaspoon vinegar * pinch of each salt, pepper, & paprika
Instructions: 1. Place potatoes in a pot of water and boil for about 20 minutes, or until soft. 2. Preheat the oven to 425 degrees. 3. Place potatoes on a full sheet pan (26X18) or two half sheets and smush with the bottom of a jar or two forks. For larger potatoes, slice in half first before smashing. 4. Spray with about 14g of avocado oil, or drizzle 1 tablespoon of oil over them and sprinkle with the spices. I recommend measuring with your heart here. Bake for 45-50 minutes or until the potatoes are nice and crispy. 5. While the potatoes are cooking, place the ground beef in a pan with some salt and pepper over medium high heat. About half way through cooking add the mustard. Cook until no longer pink. Strain out any excess grease. 6. In the same pan used to make the ground beef, or a new one, begin caramelizing the onions over medium high heat. Cook until brown. Add a small amount of water (about 1 tablespoon) to the pan and scrape up any browned bits. 7. In a small mixing bowl combine the mayo, ketchup, vinegar, paprika, salt, and pepper. 8. Begin making the bowls. Add 1/5 of your potatoes (about 100g), 1/5 of the beef (about 100g), 1/5 of the caramelized onions, and 1/5 of the fry sauce (about 2 tablespoons each).
