Marbled Large Italian Meringue Macaron Hearts dipped in royal icing 🤍❤️ decorated with gold splatters and edible gold 💫 filled with vanilla ganache 🤍 Royal Icing RECIPE (with egg white powder): 🤍 5 grams of Fun Cakes High Whip egg white powder (or any other egg white powder) 🤍 30 grams of still water (room temperature) 🤍 10-15 grams of freshly squeezed lemon juice 🤍 170 grams of icing (powdered) sugar (I use Silver Spoon) You may need additionally: 🤍 20-30 grams of still water (at room temperature) 🤍 more icing (powdered) sugar Each royal icing recipe will need some adjusting - we always focus on the final consistency 🙌 Method: 🤍 mix egg white powder and water until you see no lumps. If there are some bigger lumps left, you can either leave the mixture to stand for 15 minutes and then mix again or alternatively strain the mixture. 🤍 Add half of the icing sugar and mix well. Then add the second half of the icing sugar and mix again. 🤍 Once all icing sugar is combined, add the lemon juice and then whip the royal icing for 1-2 minutes on medium speed. The volume will increase. - at this point you should check the consistency, if it is stiff, add more water - little at a time, and whip again to loosen the mixture. - if you added too much water, and royal icing is very runny, add more icing sugar and whip again. You should aim to get the consistency like shown in the video. If you lift the whisk, the icing will flow down slowly, however, after a few taps, all traces will be gone - this is the exact consistency that you need 🙌 🤍 Add some gel food colouring (water-based) and swirl it around in the icing. 🤍 Dip each macaron into the icing, the lift and gently shake off the excess royal icing. 🤍 Using a finger, remove the excess icing and clean the sides. 🤍 Place macarons on a flat surface and leave to dry completely - overnight or you can alternatively dry the icing in the pre-heated oven at 50C for around 30 minutes. You may need to dry for longer if the layer is thicker. 🤍 Decorate with gold splatters and edible gold. The power of candy melt 🤍 and how to DISASSEMBLE A MACARON CUBE CAKE 🤍 As you can see from the video, macaron cube cake stays in place and even if you shake it really hard or turn it to the side or even upside down, it will still stay in place 🤗 so you can be 100% sure, the cake will be delivered safe and sound to your customer 🤍 So if you don’t know how to temper the chocolate or struggle with tempering it, use candy melt instead - it is a great alternative 🤍 The one that I use has added chocolate, and isn’t too sweet so the taste of your macarons won’t get affected 🙌 Just one advice: don’t use too much candy melt 🙌 a little goes a long way 🙌 if you want to thin the mixture, you can add some vegetable / corn oil 🤗 In order to take your macaron cube cake apart without breaking your macarons, use a kitchen blow torch and heat a knife.
