I often get asked how I complete my cakes, from start to finish. In this demo, I will show how I crumb coat my cake and apply the top coat. Once your top coat has been applied, go around your cake with a scraper and then fill in any gaps that the icing has missed. The next time you go around your cake, make sure you use a hot scraper. This helps to smooth the icing and get that smooth finished look. I then use an angled pallet knife to tidy up the top to give it that flat look. Once I have this look, I like to put my cake in the fridge for half an hour before I start decorating. This is just so I don’t nudge any icing and make any dents. And then your cake is ready to decorate how you want.
