Episode 1 | Christmas Sides 🎄 Roast Potatoes 🥔 In this new mini series I’ll be showing you some of THE best and tastiest classic Christmas side dishes to help you make the best tasting Christmas meal you’ll ever have had. First up, the mighty roast potatoes 😏🔥 Serves 6-8 2kg king Edward potatoes, peeled and cut into chunks (these my favourite variety as they are incredibly fluffy, therefore crisp up the best) A few garlic cloves, peeled and crushed in the palm of your hand 500g goose / duck / beef fat Few sprigs of rosemary, stalks removed Zest of 1 lemon Generous sprinkling of sea salt 1. Add the potatoes into a pot with a pinch of salt and the garlic cloves (optionally add in some rosemary sprigs here too), cover with cold water and bring to a boil. Cook for roughly 10 minutes until fork tender, but not falling apart. 2. Preheat an oven to 200 C / 390 F fan. 3. Strain the boiled potatoes then leave to steam dry in the colander for a few minutes. Add back into the dry pot, cover with a lid and shake to lightly ‘fluff’ them up - this is what gets you the extra crispy edges. 4. Add the goose fat into two baking trays, place into the oven and preheat the oil for 15 minutes. 5. Remove the tray from the oven and then carefully add in the potatoes. Coat each potato in the goose fat then place them back into the oven. 6. Cook the potatoes for 60-75 minutes, turning every 20 minutes or so to coat them evenly in the oil. 7. Whilst cooking, prepare the rosemary salt bg blending together, or finely chopping, the rosemary, lemon zest and salt. 8. Once the potatoes have cooked and are a golden brown colour all over, remove them from the oven and lift out of the tray with a slotted spoon. Toss the potatoes in a bowl with a sprinkling of the rosemary salt and some extra finely chopped rosemary. This is THE perfect potato for any roast or Christmas dinner, or simply to go alongside a bowl of rich gravy. BBQ Chicken Potato Skillet is an easy weeknight dinner recipe! Recipe 2 chicken breasts 5 small/medium potatoes olive oil + salt, pepper, garlic powder, and paprika (for potatoes) 1/2 tsp each of salt and pepper 1 tsp each of paprika, ranch seasoning, and onion powder 2 TBSP butter 1 TBSP minced garlic 1/2 cup of BBQ sauce 1 cup of shredded mozzarella cheese Steps Peel, wash potatoes, and cut up into cubes. Toss with olive oil, salt, pepper, garlic powder, and paprika (I don’t use exact measurements for this part). Cook potatoes in the air fryer at 400 degrees for about 20-25 minutes shaking them around at least a couple times while they cook. Once potatoes are cooking, cut chicken into cubes. Cook chicken in a skillet on medium high heat with a little butter. Season chicken with 1/2 tsp each of salt and pepper, 1 tsp each of paprika, ranch seasoning, and onion powder. Once chicken is finished cooking add the minced garlic and about 1/2 cup of BBQ sauce. Add cooked potatoes to the skillet and stir everything together. Top with shredded cheese. Broil in the oven for just a few minutes to melt the cheese (you could also cover with a lid and let this sit on the stove until cheese melts). All about the Sides, 48 of 50. Parmesan Potato Sticks, really delicious comforting side dish a great alternative to fries with a pillowy centre and crisp shell. 600-700g Maris piper potato 3-4 tbsp cornflour or potato starch Pinch of salt 80-100g Parmesan Oil for frying 1. bake the potatoes until and pass through a ricer saving the skins for something else 2. Add the cornflour, salt and Parmesan bring together to form a dough then press into a rectangle shape. Freeze for 40 mins to set and firm up 3. Heat the oil to 170/340f and fry in batches for 4-5 mins until golden and crispy 4. Serve with more Parmesan, salt and garlic mayo #potato #potatoes #parmesan #sides

Questa ne è una mia interpretazione, ancora più golosa e sfiziosa 😍 che ne dite, vi piace? Fateci sapere nei commenti 🥰 INGREDIENTI - 2 patate grandi - 200 g formaggio a pasta morbida da grattugiare (ho utilizzato una scamorza bianca poco stagionata) - 200 g pasta di salsiccia - 1 cipolla rossa - olio evo qb - sale e pepe qb PROCEDIMENTO: Grattugiate a listarelle il formaggio, tagliate le patate a fette non troppo spesse e tritate finemente la cipolla. Rivestite la leccarda del forno con carta forno, fate nevicare il formaggio su tutta la superficie. Ricopritela di patate, ungetele, salate e pepate a piacere. A nanna nel forno a 180º C per circa 20 minuti. Nel frattempo rosolate la salsiccia con la cipolla e un giro d’olio in padella. Attenzione a non far seccare la salsiccia, deve essere rosolata ma comunque sugosa. Passati i 20 minuti, togliete la leccarda dal forno, lasciate intiepidire 2 minuti (non deve raffreddarsi altrimenti il formaggio perde la sua “plasticità”) e cospargete cipolla e salsiccia su tutta la superficie delle patate. Fate nevicare altro formaggio e arrotolate il tutto su sè stesso a formare un filoncino. A nanna nel forno a 180º C per altri 10 minuti circa. All about the Sides, 21 of 50. Potato Terrine, a classic dish that has been around for decades in various form. A takes a long time but the actual work time isn’t huge to be fair. Invariably people question whether it’s worth the effort but I can tell you it is. The dish itself is similar in design to a pomme Anna as in layers of butter and potato but the pressing is really what makes it a terrine rather than an Anna. Layered potato dishes have been always been popular… for good reason. There is many around and many different versions this is just how I make it. Peeled and very thinly sliced potato I used Maris piper. Basically you need enough to fill whatever mould you’re using. 200g clarified butter/ghee/duck fat/beef dripping (all of these work well) 6 garlic cloves 6 sprigs fresh thyme 6 sprigs fresh rosemary Generous pinch of salt 1. It’s important to get the potato as thin as you can it’s should be almost see through, to achieve this really a mandolin is best. To create straight edges for the corners flip the potato round as you slice it. 2. I find seasoning the butter or your chosen fat is the most efficient way to flavour the terrine and you need the flavour to be present through the layers. Infusing the butter with the garlic, herbs and salt over a low heat will achieve this. I like to infuse it for at least 1 hour to really impart the flavour. 3. Line your terrine mould or loaf tin with baking parchment and layer the potato ensuring you brush every single layer with the flavoured butter or fat. The salt is in there too remember so that’s seasoning the potato at the same time. 4. When the layers are complete top with another piece of parchment and press firmly with your hand. Then bake it at 160c/320f for 2 hours importantly the potato must be tender throughout or it needs longer. 5. Press the potato overnight in a fridge with something heavy. 6. The following day, trim and portion the terrine. Keep the trimmings and deep fry them as a snack, I like to cook the slices of terrine in a hot pan with some oil to crisp it up don’t forget the edges! #series #reels #potato #potatoes #recipe #recipes
