Let’s preserve kiwi! 🥝 🥝 Tip: not a fan of kiwi skin because of the fuzz? You can use a sharp knife or a wet towel to scrape it off before use! 💨 Dehydrating: For slices: cut into relatively thick slices (about 1/4 inch thick) and arrange on a dehydrator tray. Dehydrate at 135° for 8-10 hours or until they are no longer soft when you press them between your fingers. For Fruit Leather: Purée kiwi with or without added herbs. Strain about 1/3 of the liquid out and pour onto lined dehydrator sheets. Smooth into a square and dehydrate at 135° until pliable but no longer sticky to the touch. For the skins: dehydrate until skins snap. - For an oven: use lined baking sheets and set to your lowest possible temperature. Your baking time will vary greatly based on temperature and thickness, but flipping often and opening the oven to release steam will help speed up the process. 🧊 Freezing: I only froze kiwi juice, but you can freeze the purée as well! Because of the high natural sugar content these ice cubes will be sticky even when completely frozen. 🥝 Kiwi-Basil Jam with Lemon (for waterbath canning) 3 Pounds Kiwi, Skins Removed 3 Cups Sugar* 1 Lemon, Zested and Skin Removed 1 Large Sprig Basil (6-8 Leaves) * If you’re not canning, feel free to reduce sugar content to your liking! One Great thing about the end of summer is the abundance of wonderful produce. Right now the zucchinis are large and , and a perfect for making a soup. This three ingredient soup it’s just a thing that you need right now you can eat it warm or room temperature or even cold out of the refrigerator. It is the perfect transition food and a taste delicious and it’s easy to make. 🌱Magic Zucchini Soup(only 3 ingredients 🌱 Ingredients 1 cup toasted cashews 3 cups vegetable stock 2 large zucchini peeled and sliced Additional optional ingredients: sea salt & pepper 2 tbsp vegan butter 2 tbsp nutritional yeast Green onions, Sprinkle of vegan Parm Splash of olive Instructions Add the cashews, stock and peeled zucchini in to a medium stock pot over medium heat and bring up to a simmer. Reduce heat to low and cook for 20-25 minutes or until the cashews are tender and break between your fingers. • Remove from the heat and carefully transfer the soup to a blender or use a hand blender . Season with salt and pepper and add the vegan butter & nutritional yeast (if using). Blend until the soup is completely smooth to serve. Shaved Spring Salad. 🥕 Spring is a season where veggies are perfect, exactly as they are! So using raw spring vegetables really highlights their flavor! 1 Bunch Asparagus 1 Bunch Carrots 2 Cups Arugula 1 Cup Tomato 1/2 Cup Red Onion 1 Lemon, Juiced 1/4 Cup Olive Oil 1 Tbs White Balsamic Vinegar Salt, to taste For the Salad: Remove the woody stems of the asparagus, cut off the tips, and then use a vegetable peeler to create ribbons. For the carrots, remove the greens, wash well, and create ribbons. Save the leaves of the greens of the carrots! In a large bowl combine asparagus, carrots, carrot greens, and arugula. Oil a a frying pan and set to medium-low heat. Slice the red onion thinly and add in tomatoes (chunks or small cherries work,) and asparagus tips. Sautée for about five minutes until onions start to sweat. 🫙 For The Dressing: Combine lemon juice, vinegar, olive oil, and a hefty pinch of salt to a jar. Shake well to combine. Toss dressing with the salad base! Roasted Red Cabbage Salad 🥬 Ingredients: 1/2 Red Cabbage Head, Chopped 1 Bunch Kale, Chopped 1 Can White Beans 1 Cup Dry Couscous 1 Bunch Parsley, Minced Olive Oil Salt & Pepper, to taste Preheat your oven to 400°. In a large bowl combine chopped cabbage, rinsed beans, and a hearty drizzle of olive oil. Mix to combine. Pour onto a lined baking sheet, top with salt and pepper. Roast for 30 minutes, periodically letting steam out, for 25-30 minutes until beans and edges of cabbage are crispy. Cook couscous until soft. I use 1 cup dried couscous and 2 cups water in a rice cooker. In a large bowl combine chopped kale and parsley. Top with still hot couscous and roasted cabbage mix. Toss with dressing! Dressing: 1/4 Cup Olive Oil Juice of 1 Lemon 1 Medium Shallot, Finely Minced 1 Tbs Tahini 1 Tsp Ginger Root, Finely Minced Add all ingredients to a jar and shake well to combine. Let’s prep a steak salad! 🥗 For the marinade: 1 Bunch Cilantro 2 Cloves Garlic 1 Whole Lime, chopped 1/4 Cup Olive Oil Salt & Pepper 1 Lb Skirt Steak Combine all marinade ingredients in a food processor. Add to a bag (I used a 1/2 gallon @stasherbag ) and then add in skirt steak. Let marinate for at least four hours, but preferably overnight. For the salad: Marinated Skirt Steak 1 Head Romaine, Chopped 4 Peppers, Chopped 1/2 Cup Jicama, chopped 1/2 Cup Pickled Red Onion Tomatoes 🥩 Grill the skirt steak to your preferred doneness (I did about 3 minutes per side) let rest. 🫑 Using the same grill pan, grill the peppers until they’re starting to blister. Follow by blistering the tomatoes. 🧅 Quick Pickled Red Onions are on my feed! You can scroll back or comment that you’d like the recipe and I’ll send it!
