Ok, what are you having for dinner tonight, because we’re having this: Spiced Roasted Potatoes, Cauliflower & Chickpeas and Creamy Hummus. INGREDIENTS: 4 tbsp olive oil 1 x 400g (240g drained weight) can chickpeas 400g baby potatoes, washed and halved 400g cauliflower florets 2 tbsp cornflour 1 tsp sumac 1/2 tsp cumin 1tsp paprika 1tsp pul biber 1 tsp garlic powder 3/4 tsp sea salt flakes 1/2 tsp coarse black pepper 1 tsp dried oregano 1 tbsp sesame seeds Hummus: 1 x 660g jarchickpeas 1-2 finely chopped garlic cloves (to your own taste) 6 tbsp tahini 1 tbsp extra virgin olive oil 1/2 tsp salt 60-80ml freshly squeezed lemon juice (or to your own taste) A little ice cold water to loosen the mixture if necessary (just add a tbsp at a time) Method: Preheat your oven to 200c fan / 220c. Brush a large non-stick baking tray with 1 tbsp of olive oil and pop in the oven for 10 mins while you prep the vegetables. Pat chickpeas completely dry and pat potatoes and cauliflower dry too. Add vegetables and chickpeas to a large bowl, sprinkle over the cornflour, and mix well with your hands until fully coated. Add 2 tbsp olive oil to the bowl along with sumac, cumin, paprika, pul biber, garlic powder mix again, add remaining olive oil, salt, pepper, oregano and sesame seeds, stir well again. Add everything evenly to hot tray (oil should sizzle), placing potatoes cut side down, the pop tray near the top of the oven (in between middle and top racks) Roast for 30-35 mins, turning potatoes and cauliflower halfway through (if some cauliflower florets start browning too much, remove before the 30 minutes is up) until crispy all over. While the vegetables roast, whizz all the hummus ingredients together in a blender, then spread over a large platter. Top with the roasted vegetables and a sprinkling of sumac, cumin, paprika, pul biber and fresh parsley, a generous drizze of extra virgin olive oil. Full recipe for the brisket on my blog (recipe for #melizcookschips in my cookbook #MelizsKitchen and on my YouTube channel): Ingredients for the Beef Brisket: 2 x 750g OR 1 x 1kg piece(s) of unrolled berg brisket 2 tbsp olive oil 1 1/2 tsp sea salt flakes 750ml boiling water 1 beef OR chicken stock cube 2 tbsp tatlı biber salçası (sweet / mild Turkish red pepper paste) tomato purée 1 tbsp pomegranate molasses 1 tbsp Worcestershire sauce 1 very large onion, peeled and finely diced 4 large garlic cloves, peeled and bashed 2-3 large sprigs of rosemary 3 bay leaves 1 cinnamon stick 2 level tbsp plain flour (GF is fine too) 3/4 tsp coarse black pepper Method: Take the brisket out of the fridge 30 mins before cooking and preheat your oven to 170c / 150c fan. Once you’ve oiled, salted and seared the beef, make the gravy, pour over the seared brisket, cover and cook in the oven on the bottom shelf for around 4-5 hours for 2 x 750g pieces of brisket or, if using 1 x larger 1kg piece of brisket, cook for 5 - 6 hours (it should easily pull apart with a fork once cooked so could take even a little longer). INGREDIENTS: 1 cup roughly chopped marinated artichokes 1/4 cup chopped capers 2 rounds of garlic & herb Boursin 2 cloves of garlic, minced 1/4 cup dry white wine (I used Chablis) 1.5 tbsp good olive oil 1 tbsp dried thyme Juice + Zest of 1 lemon (plus more zest for garnish) 1/2 tbsp Kosher salt Black pepper 8 oz Spaghetti Fresh parsley, chopped for garnish Freshly grated Parmesan, for garnish DIRECTIONS: Preheat oven to 400 degrees F Place boursin cheeses, capers, artichokes, garlic, white wine, lemon zest + juice, olive oil, thyme, and salt in a 9x13 baking dish – and bake uncovered for 30 minutes While Boursin is baking, boil spaghetti until Al dente, making sure to reserve about 1/4 cup of pasta water in the event sauce is too thick Remove Boursin from the oven after 30 minutes, and stir well. Strain spaghetti, then using tongs, place spaghetti into the Boursin artichoke mixture and make sure all is well incorporated Serve immediately! This is my super simple cheats’ version of a popular Turkish dish, Çökertme Kebabı, originating from south Western Turkey; I use beef mince instead of the traditional small pieces of marinated fried beef steak (or veal), and chunky potatoes or chips instead of shoestring fries - perfect for midweek or weekend simplicity. I used my #melizcookschips recipe (on my YouTube channel) but just cut the chips into disks. Vegan? Keep everything meat free by using a plant based natural yoghurt and meatless mince. INGREDIENTS: 1 cup EVOO 1/3 cup Apple cider vinegar 1/4 cup soy sauce 1 tbsp Dijon mustard 1 tsp black pepper 4 cloves of garlic 1/2 tsp nutritional yeast (optional) 1 tbsp honey to sweeten it up (optional) DIRECTIONS: Using either a handheld immersion blender or a standard blender, blend all ingredients together until smooth. Prepare the Chicken: Rinse the chicken and pat dry. Stuff the cavity with the lemon half, rosemary, thyme, sage, and garlic. 2. Season the Chicken: In a small bowl, mix the melted butter with Uncle Dibbz Durtty Bird Rub. Apply the mixture evenly over the chicken. 3. Prepare the Vegetables: In a bowl, toss the halved potatoes, carrots, and onion with olive oil. Sprinkle with Uncle Dibbz Delta Dust, tossing again to coat evenly. 4. Prepare the Oven Bag: Add flour to the oven bag and shake to coat the inside. Place the seasoned vegetables in the bag, then add the chicken on top. Seal the bag and make a few small slits on top. 5. Roast: Place the bag in a roasting pan and bake in a preheated oven at 350°F for about 1.5-2 hours, or until the chicken reaches an internal temperature of 165°F. 6. Ok, what are you having for dinner tonight because I think this Loaded Mercimek Çorbası (Lentil Soup) is the one! Ingredients: 300g split red lentils, washed + drained 75 g brown basmati rice, washed + drained 75g quinoa, washed + drained 3 litres cold water 1 large sweet potato, finely grated 2 large carrots, finely diced 2 celery sticks, finely diced 1 large onion, finely diced 1 chicken or vegetable stock cube 500 ml boiling water 4 tbsp fresh lemon juice 1 tsp salt 1/2 tsp coarse black pepper To serve Pul biber Dried mint Grilled black olives Toasted bread Fried hellim cubes Lemon wedges Sea salt Cracked black pepper Method: Add the drained lentils, rice and quinoa to a large pan with the 3 litres of cold water. Place the pan over a high heat and bring to the boil for 5 minutes, skimming and discarding the foam that forms on the top. Reduce the heat a little and cook for 20 mins until the soup starts to thicken. Dissolve the stock cube in the boiling water in a heatproof jug. Add the stock to the pan, the the vegetables and cook for a further 10-15 minutes until the vegetables are tender. Add the lemon juice, salt and black pepper to the soup pan, give everything a gentle stir, cook for a further minute and then remove one-third of the soup and blitz carefully in a food processor. Return the blended soup back to the pan. Serve bowls of the soup topped with the croutons, hellim, a sprinkling of pul biber, dried mint, grilled black olives, l an extra squeeze of lemon juice.
