Day 4/20 🍃🍃 Spinach & Ricotta Stuffed Shells Ingredients: - 250g smooth ricotta - 100g Spinach, roughly chopped - 6 cloves Garlic, minced - Pasta shells - 50g Mozzarella - 1/4 cup Parmesan - 1/4 cup Bread crumbs - 800g Tinned tomato - 1 tsp chilli flakes - 1 tsp Dried Basil - 1 tsp Dried thyme - 1 tsp Dried oregano - 2 tbsp olive oil 1. Heat up 1 tbsp olive oil in a large frying pan on medium heat. Add half the garlic and sauté for 1 minute before adding the spinach and a good pinch of salt. Sauté the spinach for 2-3 minutes to remove some moisture and cook it out. Remove from the frying pan and set aside to cook slightly 2. Put the pan back on the heat and add the rest of the olive oil and garlic, cooking for 2-3 mins. 3. Add in tinned tomato’s, Basil, thyme, oregano, a pinch of salt and sugar, stirring to combine. Stir well to combine and pipe/spoon into the cooked pasta shells. 6. Remove 2/3 of the sauce from the frying pan and set aside 7. Arrange stuffed shells in the pan with the remaining sauce, cover with remaining sauce and extra mozzarella, breadcrumbs and Parmesan cheese 8. Taco Tater Tot Casserole is an easy dinner recipe my family loves! INGREDIENTS 1 lb ground beef 1 chopped onion 1/2 tsp each salt and pepper 1 tsp each of cumin, dried cilantro, 2 tsp chili powder 1/4 tsp cayenne 1 can corn (drained) 1 can Rotel Diced Tomatoes & Green Chiles (not drained) 1 cup sour cream 2 cups shredded Colby Jack Cheese Tater Tots or Crispy Crowns Buffalo Wild Wing’s Southwest Ranch INSTRUCTIONS Brown one lb of ground beef with a chopped onion in a skillet over medium high heat. Once browned drain grease and season with salt, pepper, cumin, dried cilantro, chili powder, and cayenne. You could use a taco seasoning packet instead of these seasoning if you would rather do that. Add one can of drained corn, one can of Rotel (not drained), 1 cup sour cream, and about 1 cup of shredded Colby Jack cheese. Stir everything together well. Top with one more cup of shredded cheese. Top with tater tots or the crispy crowns. I didn’t quite use the whole bag. Bake at 400 degrees for about 35 minutes or until the tater tots are cooked to your liking. You can also broil the tater tot casserole for a few minutes to help the tots get crispy. Top with Buffalo Wild Wing’s Southwest Ranch. Enjoy! Let me know if you try it out! Tortellini w/ Spinach in a Lemon Cream Sauce🍋 this dish is just so easy to whip together and is the definition of comfort. If you need something quick, definately give this one a go! Day 6/20- Chicken Gyros 🌯 Flatbread recipe from: @Jasmin’s Eats Ingredients: - 4 chicken thigh - 1 tbsp Olive oil - 1 Lemon, juice and rind - 1 tbsp Smoked paprika - 2 tsp Cumin - 1 tsp cayenne pepper - 2 tsp Oregano - 1 tsp Thyme - 1.5 tsp Salt - 200g Greek yoghurt - 200g Self raising flour - 1 Tomato, sliced thin - 1 Red onion, sliced thin - 1 Cucumber, deseeded and grated - 100g more Greek yoghurt (tzatziki) - 1 tsp Dill, chopped - 6 cloves garlic, minced - Frozen chips (there isn’t enough time) 1. Add chicken, half the garlic, olive oil, lemon juice and rind, cumin, paprika, oregano, thyme, salt and cayenne pepper to a bowl. Mix to combine and set aside to marinate for 5-10 mins 2. I’m a separate bowl combine self raising flour, Greek yoghurt and a pinch of salt. Knead to combine, cover with plastic wrap and set aside for 5 minutes 3. Deseed and grate a cucumber, then strain it through 2 pieces of paper towel , squeezing to remove as much water as possible. Add it to a bowl with green yoghurt and fresh dill, mixing to combine to make the tzatziki. 4. Add frozen fries to your air fryer and cook for 12-15 mins at 180°C until golden brown. Take out and immediately season with paprika, cumin, salt and garlic powder 5. Evenly divide dough into 3 balls and roll out about 1-2mm thick before lightly brushing with olive oil and frying in a pan on medium heat for 1-2 minutes per side or until golden brown. Take out and set aside covered with a tea towel until use 6. Pan fry or bbq marinated chicken thigh for roughly 3.5 mins per side on medium/high heat to get a nice char and cook through. Slice chicken and if it’s not cooked (mine wasn’t lol) put it back in the pan on high. This will also get nice colour on all sides 7. Wing stop at home 😮💨 Hot honey chicken tenders 🔥🍗👩🏻🍳 Ingredients: - 1 pack chicken tenderloins - cooking oil - buttermilk - Franks red hot sauce - Flour - Baking powder - Nashville hot seasoning - Black pepper - Garlic powder - Onion powder - Chili powder - Cumin - Butter - Honey Cooking instructions: - In a large bowl, place your chicken tenders and season with 2 tbsp Nashville hot seasoning (more if you want it more spicy) 1 tbsp garlic powder 1 tbsp onion powder 1 tbsp black pepper 1/2 tsp chili powder (more if you want it more spicy) 1/2 tsp cumin - once you season your chicken drizzle oil over the chicken rub the seasoning into the chicken until fully coated. Cajun chicken & sausage alfredo 🍅🌶️✨ this came together in about 30 minutes and was so flavorful and filling! Perfect for a quick weeknight dinner! Score your chicken, and season with Cajun 2. Stuff the chicken with slices of halloumi 3. Mix 2 tbsp of sriracha and 2 tbsp of honey and brush on top of the chicken breasts 4. Day 3/20- Honey Soy Chicken Ingredients: - 4 boneless, skinless chicken thighs, diced - 1 tsp garlic powder - 1 tsp onion powder - 1 tbsp honey - 2 tbsp soy sauce - 1 tsp chilli powder - 1/2 tsp msg (optional) - 1 tsp ginger paste - 1 tsp sesame oil - 1/2 tsp white pepper 1. Combine all ingredients in a bowl and mix well to combine and completely coat the chicken. Allow to marinate for 5-10 mins minimum 2. Heat up a large frying pan on high for 5 mins. Add 1 tbsp of any high heat oil and coat the bottom of the pan. 3. Fry off all marinated chicken until cooked through and the marinade caramelises and turns a darker brown colour 4. Sweet & Sour Sheet Pan Meal is an easy one pan meal! INGREDIENTS 1 lb chicken breasts 1 pack kielbasa 2 green bell peppers 1 onion 2 cups fresh pineapple 1/2 tsp each salt and pepper 1 tsp each smoked paprika and garlic powder 1/4 tsp red pepper flakes Sweet & Sour sauce Chopped green onions Jasmine rice INSTRUCTIONS If serving the sheet pan meal over rice, cook 2 cups of jasmine rice according to the directions on the package. Cut chicken into cubes. Slice the kielbasa into rounds. Chop the onion, bell peppers, and pineapple into evenly cut pieces. Spray a sheet pan with cooking spray and add the chicken, kielbasa, onion, and bell peppers to the sheet pan. Add 1-2 tbsp of olive oil and season with salt, pepper, paprika, garlic powder, and red pepper flakes. Stir everything around well until everything is well coated in seasonings. Top the sheet pan meal with pineapple. Bake at 400 degrees F for 25 minutes. Broil for a couple of minutes once the chicken is fully cooked. Top with your favorite sweet and sour sauce. RECIPE: 1. Preheat oven to 425 degrees and grease a 13x9 baking dish. 2. In the prepared dish, mix together tortellini, meatballs, pasta sauce, chicken broth, 1 cup mozzarella, and seasonings. 3. Lasagna recipe 🔥❤️ ingredients: - Half a white onion - 5 garlic cloves - 1lb of ground beef - 1lb of medium Italian sausage - 24oz tomato sauce - 28oz crushed tomatoes - Pepper - Salt - Oregano - Italian seasoning - 32oz ricotta - 2 eggs - Mozzarella cheese - Parsley - Lasagna noodles Cooking instructions: - start by sautéing, half a white onion, and five minced garlic clove - once the onion is transparent, add in 1 pound of ground beef and 1 pound of Italian sausage, break apart and cook fully - Once your meat is done cooking, add in your 24 ounce jar of tomato sauce and half a 28oz can of crushed tomatoes - To your sauce Add in 1 tsp of oregano, 2 tsp of Italian seasoning, 2 tsp of salt and 1/2 tsp of black pepper. Mix in and let the sauce simmer on low to medium heat for about 7 min - For your ricotta filling to a bowl add in your 32oz tub of ricotta, 2 eggs, 2 cups of mozzarella cheese, handful of fresh parsley, 1 tsp of salt and pepper. Mix until fully combined. - Boil your lasagna noodles until soft - To layer your lasagna In a baking dish your going too start by spraying your baking dish with a nonstick spray then add in 1 cup or the meat sauce to the bottom of the dish, add 4 lasagna noodles over that then add 2 cups of the meat sauce on top spread and then add in 2 cups of the ricotta filling and spread and then top with another 4 lasagna noodles and just repeat 2 more times once you get to the top just add the rest of the meat that’s left over and top with cheese - Bake at 370 for 45 min covered with foil then bake uncovered for 15 min and then broil for 2-3 min and enjoy ❤️ #lasagna #dinner #easydinner #pastarecipe #quickdinner #recipe #easyrecipe #receta #recetasfaciles #fyp #paratii #trending #CapCut #makedinnerwithme
