You can serve this as is, on top of sourdough, crackers, or even lettuce cups. The ratios below are what worked for me - you can add more or use less of any ingredient to your liking. . Here is how to make it: . 1.First is the sauce. This is as easy as it gets, but can take some time in the oven if you are using garlic confit. Process well, taste and adjust. . 3.Then, the salad. First, finely chop 6-8oz of raw broccoli and add it to a mixing bowl. . 4.Finely dice 2 baked chicken brsts (you can use thighs or rotisserie chicken here, too). Add it to the same bowl. . 5.Finely dice 1 red onion, add it to a smaller bowl, top with cold water, and mix a couple times over 5-10 minutes. Submerging them in cold water takes away that intense, sharp bite from the raw onion. After its soaked for a few minutes, strain and add to the same bowl as broccoli and chicken. . 6.Add as much sauce to the bowl as you want, toss everything together, give it a taste and adjust as you like. Then top with some more crumbled feta, some chili flakes, or any other topping you like. . Olive oil 4 large red bell peppers, halved and seeded 6 garlic cloves, unpeeled 8oz block Athenos Feta cheese Athenos crumbed Feta, to top 1 medium yellow onion, diced 2 stalks celery, diced 2 medium carrots, diced 1 tsp dried thyme 1 tsp red pepper flakes, to taste ½ teaspoon smoked paprika ½ cup dry white wine (sav blanc) 4 cups low-sodium vegetable broth 28oz can crushed tomatoes 1 medium yukon potato, peeled and diced Juice from 1 lemon, to taste Salt and freshly ground black pepper, to taste
Garnish: Athenos crumbled Feta, thyme, lemon zest, black pepper, olive oil 1. Preheat oven to 400°F
2. Place Athenos Feta chunk, halved bell peppers (cut side down), and garlic on a baking sheet lined with parchment paper. Drizzle everything with a bit of olive oil and season with salt and pepper. Roast for 25-30 minutes, or until the peppers are soft and the skins are blistered.
3. While the vegetables are roasting, heat 1 tablespoon of olive oil in a large pot over medium heat. Add the diced onion, celery, carrots, thyme, red pepper, paprika, and salt and pepper. Sauté for 5-7 minutes until softened.
4. Pour in the white wine and cook for 2-3 minutes.
5. Add the diced potato, crushed tomatoes, and vegetable broth to the pot. Season with a pinch of salt. Bring to a boil and simmer for about 15-20 minutes, or until the potatoes are fork-tender.
6. Once the potatoes are tender, carefully blend the soup with an immersion blender or in batches with a heat-safe blender. Return to the pot.
7. Once the roasted feta and peppers are done, let them cool slightly. Peel the skins off the peppers (if desired) and squeeze the roasted garlic cloves out of their skins. Blend until smooth and add to the pot.
8. Add in the lemon juice and adjust seasonings as needed.
9. Ladle the soup into bowls and garnish with crumbled feta, fresh herbs, a drizzle of olive oil, and cracked black pepper. Serve with crusty bread or a grilled cheese and enjoy!

It’s also a great dish to serve when entertaining because it can all be prepped ahead of time and is sure to be a crowd pleaser! 🥂❤️ Serves: 6-8 Ingredients for the Salad: 10 oz. couscous (I use @NearEastProducts ) 1 tbsp. unsalted butter 2 cups chicken broth or broth of choice 2 cups cherry or grape tomatoes, quartered (1 pint) ½ cup red onion, diced small ½ cup kalamata olives, chopped 1 cup mini cucumbers, diced small 1 cup yellow/orange bell pepper, finely chopped 1 ½ cups Fresh Parsley, finely chopped (1 bunch) ¼ cup Fresh Mint, finely chopped 1-2 cups feta cheese, crumbled for garnish 1 cup chickpeas, rinsed and drained Ingredients for the dressing: ½ cup extra virgin olive oil 4 tbsp. Red wine vinegar 4 tbsp. Frehly squeezed lemon juice (juice of 2 large lemons, I love @wonderfulseedlesslemons 🍋) 1 clove garlic, grated 1 tsp. Dried oregano 1 tsp. Dried basil ½ tsp. All about the Sides, 19 of 50. My Greek Style Salad, so this is very much an adaption of a dish I had a few years ago when on holiday in Crete. The original is a bit like a bruschetta or it was when I had it, using a barley rusk as the crouton the juices all soak into it and it’s really delicious. This salad essentially creates the same effect and is also delicious. 1 medium cucumber 2 medium red onions 6 medium tomatoes Handful of Dill 120ml olive oil 2 tbsp red wine vinegar 2 heaped tbsp capers 1 tbsp dried oregano Generous pinch of salt 1 tsp white pepper 50-60g Kalamata olives 150g feta Wholemeal bread cut into large croutons 1. peel the cucumber and remove the seeds doesn’t matter if you don’t get them all. Slice it into 1/2cm thick pieces 2. Thinly slice the red onion and dice the tomatoes into a chunky dice, roughly chop the dill 3. Make the dressing by adding the olive oil, vinegar, capers, oregano, salt and pepper to a bowl mixing well. 4. Add the tomatoes, onion, cucumber and dill to the bowl with the olives and feta mix well and let it sit for 15-20 mins 5. Meanwhile bake the bread until it becomes crispy croutons (10-15 mins at 200c) 6. Serve the salad over the top of the croutons #series #reels #salad #feta #crete

Crispy Feta & Hot Honey. 180g Feta cut into thick batons 2 sheets of brick of filo pastry Melted butter 6-8 tbsp honey 1 tsp chilli flakes 1 tsp chilli powder 1 tsp smoked paprika 1 tsp sesame seeds 1. brush the brick or fill pastry on both sides with melted butter and roll up the feta. Bake at 200c/400f for 15-18 mins 2. Heat the honey with the chilli and paprika for 5 mins on a low heat 3. Drizzle the hot honey over the feta and top with sesame seeds #feta #honey #cheese #pastry

MEDITERRANEAN ROASTED CARROTS This is one of of those dishes that will make you fall in love with eating your veggies. If you’re super lowcarb, feel free to use squash. And if you aren’t watching carbs too closely, this would be amazing with sweet potatoes, too. You can serve this as an appetizer, as a warm salad of sorts, or even devour it as a main. You do you. . Here is how I made it: . 1.Start by washing and peeling 6-8 medium carrots. Cut them into thirds, then cut those in half. Add to a bowl. . 2.Drizzle about 2 tbsp olive oil over the carrots. Season with a couple pinches salt, pepper, 1 tbsp paprika, 1/2 tbsp garlic powder, 1 tbsp thyme (or oregano), and 1 tsp cumin. Mix well. . 3.Lay the carrots out on a baking tray or dish, making sure they are not overly crowded. Optional: drizzle with a little more olive oil. . 4.Roast in the oven at 400F for 35-40 mins. Time carries by oven, so keep an eye on it. You can flip them at the end and roast the other side for another 5 mins. . 5.To make the yogurt feta sauce, grab a mixing bowl. Add 1 cup thick plain yogurt, crumble about 1.5 to 2 ounces feta, drizzle with 1 tbsp olive oil, add 1 tsp Aleppo pepper, and season with salt. Mix, taste, and adjust. . 6.Spread the sauce on the bottom of a serving plate. Top with carrots, and top with 1/2 cubed avocado, a handful of finely chopped pistachios, 2 tbsp fresh finely chopped parsley, 1 tbsp fresh finely chopped mint, some Aleppo pepper flakes, feta crumbles, then squeeze some lime juice. .
