How to Make 10 Minutes PUMPKIN GNOCCHI Gnocchi are a staple in Italian kitchens but while potato gnocchi are the most well-known, they’re not the only ingredient you can use to make gnocchi! This seasonal gnocchi recipe uses roasted pumpkin to create gnocchi infused with Pecorino Romano cheese that are smothered in a creamy burnt butter and sage sauce. INGREDIENTS 400 grams Pumpkin 14oz 250 grams 00 flour 8.8oz 3 TBSPs Pecorino Romano cheese 1 egg 80 grams Butter 2.8oz 1 bunch Fresh sage INSTRUCTIONS This homemade gnocchi requires fresh pumpkin! Start by slicing off the stem then scoop the seeds out. Make sure you slice the skin off as well. Once it’s cleaned, place the pumpkin on the chopping board, slice it into pieces, then chop each slice in half. Preheat your oven to 180 °C/ 356°F. While heating, place your pumpkin slices on the baking sheet with a piece of parchment paper. Bake for 40 minutes then leave to cool - your roasted pumpkin is then ready to be turned into gnocchi! In a large bowl, add 250g/8.8oz of 00 flour and grab a potato masher. Smash a few pieces at a time into the bowl with flour. Scrape excess off the masher with a spoon and continue until all your pumpkin is added. Add 3 tablespoons of Pecorino Romano cheese (even more if you’d like!) along with the egg. Use one hand to mix the ingredients in the bowl and keep mixing until the dough starts to turn orange. Once the dough starts to form, you will want to transfer it to the kitchen counter and keep kneading it until all the flour is absorbed. Keep kneading until all of the flour has combined well and forms into a ball. Once ready, place the pumpkin gnocchi dough in your large bowl and cover it. Leave this to rest for 10 minutes. It's now time to make the gnocchi! Line a tray with baking paper and place this on the side for now. Uncover the dough and place it on the bench/wooden board then sprinkle flour underneath it and on top. How to Make Penne all'Arrabbiata Like an Italian (The Angry Pasta) Made with fresh chilies, garlic, chopped parsley and tomato sugo, this classic Roman pasta is sure to satisfy your cravings for authentic Italian goodness. The fiery hot sauce is made with tomatoes, olive oil, garlic and red chilli peppers, earning its name “arrabbiata” which means angry. But don’t be scared off by the heat, simply adjust the amount of chilies used to your desired spice level. INGREDIENTS 2 cans Italian peeled tomatoes Hot chili pepper as much as preferred Small bunch Fresh parsley Chopped 3 cloves Garlic Crushed 300 g Penne Pasta Extra Virgin Olive oil EVOO Pecorino romano grated INSTRUCTIONS Add 5L water to a large pot and put it on the stove at a medium-high heat. Once it boils, add a tbsp rock salt and allow to dissolve. Add the pasta to your pot and leave to cook according to the time referenced on your pasta packet. Pour the peeled tomatoes into a large bowl and crush them either by hand or use a potato masher. Finely chop chilies into small pieces, removing some of the seeds if you prefer less spice. Put your pan on the stove at a medium heat and add a generous amount of EVOO. Add a splash of water to your pan along with the freshly crushed garlic and stir until it becomes slightly browned. Stir in as much chili as you prefer then pour the crushed tomatoes in and allow to cook for about 5 minutes. After this time mash the tomatoes a little more using a potato masher or even a wooden spoon to squeeze out more juice. Mix in the chopped parsley and leave to simmer. Just before the pasta is ready, collect a mug full of pasta water and leave to the side. Now strain the pasta, add it to the pan and stir gently. Add a few tablespoons of pasta water and toss the pasta really well in the sauce until it has thoroughly combined.
