I’m back turning $50 of groceries into a week of easy, healthy meals! they’re all gluten & dairy free, and you can grab the entire grocery list from the caption of the last video 🤝🛒 I’m kicking it off with a shockingly simple but SO delicious lemony chicken and rice bake — the full recipe is below! 🍋 ingredients: - 2 tbsp olive or avocado oil - 1 lb boneless chicken thighs - 1 + 1/2 tsp salt - 1/2 tsp black pepper - 2 tsp smoked paprika - 2 tsp italian seasoning - 1/4 yellow onion, chopped - 3 garlic cloves, minced - 1 cup of white rice - 1 lemon, juiced - 1 cup chicken broth - 1/2 of 15oz can full-fat coconut milk - 2 cups chopped kale - up to 1 + 1/2 cups water, as needed - 1/3 cup fresh chopped parsley preheat oven to 375 degrees and drizzle the olive oil on a large skillet over medium heat on the stovetop. pat the chicken thighs dry with a paper towel, then season all over with the salt, black pepper, smoked paprika, and italian seasoning. transfer the chicken to the pan when the olive oil is heated. cook the chicken to crisp each side, about 5-7 minutes on each side depending on thickness, then set aside on a plate. in the same pan, add the chopped onion and sauté for 5 minutes, then add the minced garlic. when the onion and garlic are translucent, pour in the rice and let it toast for a few minutes, stirring frequently. add in the lemon juice, chicken broth, and coconut milk and mix to combine. add in all of the chopped kale and let it wilt down. add up to 1 + 1/2 cups of water as needed to wilt down the kale and make sure all of the rice is covered in liquid. transfer to the oven and bake for 15-20 minutes, until the rice is fully cooked and the chicken has an internal temp of 165 degrees. serve immediately or store the chicken and rice in airtight containers in the fridge for up to 4 days. enjoy!! #budgetshopping #groceriesonabudget #groceryshopping #groceryshop #groceryhaul #mealprep #mealprepping #mealprepideas #grocerylist #mealsonabudget #healthyonabudget #easyhealthyrecipes #glutenfreerecipes #dairyfreerecipes #traderjoes #chickenandrice

welcome back to my series where I’m turning a single $55 grocery list into your week of easy, healthy meals — this is recipe #1! 💕 if you’re new here, I post one recipe per day all week and all of them are gluten & dairy free and serve 3-4 people! the entire grocery list is in the caption of the previous video 😊 full recipe is below & also on my website! ingredients: - 1/4 cup olive oil - 3/4 large yellow onion, diced - 2-3 large carrots, diced - 10oz sliced white mushrooms - 4 garlic cloves, minced - 1-2 tsp salt + more as needed - 1/2 tsp black pepper - 1 tsp dried thyme - 2 tbsp cornstarch, arrowroot starch, or tapioca starch - 1/2 cup nutritional yeast - 3 + 1/4 cups vegetable broth - 1/2 cup water, plus more as needed - 2 tbsp coconut aminos or tamari - 1 cup wild rice, thoroughly rinsed - 1 heaping cup shredded kale - 1/2 15oz can full-fat coconut milk, shaken heat the olive oil over medium heat in a large pot, then add the diced onion and carrots. cook the onion and carrots, stirring periodically, for 10 minutes or until the onions are translucent, then add in the sliced mushrooms and minced garlic. stir and cook for another 10 minutes. mix in the salt, black pepper, and thyme and let the spices get aromatic, about 3-5 minutes. add in the starch and mix well to incorporate it into the vegetables. do the same with the nutritional yeast. pour in all of the vegetable broth, 1/2 cup of water, coconut aminos, and rinsed wild rice. put a lid on the pot and bring the soup to a boil. once boiling, reduce heat to medium-low and cook, covered, for 40-55 minutes, stirring occasionally. once the rice is fully cooked, mix in the shredded kale and coconut milk. allow the kale to wilt, then serve immediately or simmer over low heat until serving. store leftovers in an airtight container in the refrigerator for up to five days or in the freezer for up to a month. turning $50 of groceries into a week of easy, healthy dinners, recipe #3! 🛒💕 every day this week I’m sharing a new gluten & dairy free recipe that you can make using the grocery list from my first video! today’s recipe is perfect for freezing so if you have extras, you’re in luck! the full recipe is below! ingredients: - 2 tbsp olive or avocado oil - 1 lb boneless chicken thighs - 1 tsp + 1 tsp salt - 1/2 tsp + 1/2 tsp black pepper - 1 tsp + 1 tsp italian seasoning - 2 tsp smoked paprika - 3/4 yellow onion, chopped - 4-6 celery ribs, chopped - 3-4 large carrots, chopped - 3 garlic cloves, minced - 1 cup white rice - 2 cups chicken broth - 2 cups water (plus more depending on preference) - juice + zest of 1 lemon - 1/2 15oz can full-fat coconut milk - 1/4 cup fresh chopped dill - 1/4 cup fresh chopped parsley start by heating the oil in a large pot over medium heat and seasoning the chicken thighs all over with 1 tsp salt, 1/2 tsp black pepper, 1 tsp italian seasoning, & 2 tsp paprika. when the oil is heated, add in the chicken. fully cook the chicken by letting sit in the oil for about 7-9 minutes on each side, then remove from the pot, cut into small pieces, and set aside. in the same pot, add the chopped onion and sauté, stirring frequently, for 5 minutes. add in the celery & carrots and sauté until the onion is translucent. add in the garlic and remaining salt, black pepper, & italian seasoning. mix well and once the spices are incorporated and aromatic, add in the broth, water, lemon juice + zest, & rice. cover the pot and bring to a boil. once boiling, let the soup simmer for 20 minutes, covered. after the 20 minutes the rice should be fully cooked. you may need to add more water at this point depending on how liquidy you want the soup. add in the coconut milk, dill, & parsley, and add back the chicken. mix to incorporate and let simmer on low until ready to serve. enjoy immediately or store in an airtight container in the fridge for up to 5 days or freeze it!! enjoy 💕 #budgetshopping #groceriesonabudget #groceryshopping #groceryshop #groceryhaul #mealprep #mealprepping #mealprepideas #grocerylist

welcome back to my series where I’m turning a single $55 grocery list into your week of easy, healthy meals — this is recipe #1! 💕 if you’re new here, I post one recipe per day (5 total recipes) and all of them are gluten & dairy free and serve 3-4 people! the grocery list is in the previous video 😊 full recipe is below & also on my website! ingredients: - 1 lb ground turkey - zest of one lemon - 2 tsp salt - 1/2 tsp black pepper - 1 tsp dried oregano - 1 tbsp dried basil - 2 tbsp olive oil - 1/4 large yellow onion, diced - 3 garlic cloves, minced - 1 cup dry rice, rinsed - 1 tsp smoked paprika + salt & pepper to taste - 1 + 1/2 cups veggie broth (can sub chicken broth) - 1/2 13.5oz can full-fat coconut milk (3/4 cup) - juice of 1 lemon - 1-2 cups water (depending on need) - 1/2 6oz bag baby spinach preheat your oven to 400 degrees and line a sheet pan with parchment paper. in a large bowl, combine the ground turkey, lemon zest, salt, black pepper, oregano, and basil until it’s a uniform mixture. use a cookie scoop or spoon to shape the mix into ~12 even meatballs and place on the sheet pan. bake for 15-20 mins, or until the internal temp is at 165 degrees. while the meatballs bake, heat the oil over medium heat in a large skillet. add the diced onion and sauté until translucent. add the garlic and cook for another minute, then mix in the rice and season with salt & pepper + the smoked paprika. let the rice toast, stirring occasionally, for about 5 minutes then pour in the broth, coconut milk, and lemon juice. add 1-2 cups of water, depending on how much you need to completely cover the rice in liquid. mix to combine, then cover the pan and cook for 15-20 mins, until the rice is fully cooked. mix in the baby spinach and wilt it down, then add the cooked meatballs on top and top with a drizzle of olive oil and additional lemon zest if desired. makes 3-4 servings. enjoy!! 💕 #budgetshopping #groceriesonabudget #groceryshopping #groceryshop #groceryhaul #mealprep #mealprepping #mealprepideas #grocerylist #mealsonabudget #healthyonabudget #easyhealthyrecipes #glutenfreerecipes #dairyfreerecipes #traderjoes

20 Minute Wonton Soup 🫶🏻 1 Bag frozen mini Wontons 1 Carton (32 oz.) Ramen broth 5 green onions, sliced 1 carton mushrooms, sliced Spinach, bok choy, or cabbage 5 cloves minced garlic 1 tbsp ginger 1 tbsp sesame oil 1/4 cup soy sauce 1. Add sesame oil to pan over medium high heat. Sauté garlic and ginger for 30 seconds. 2. Add mushrooms and half of green onions and sauté until mushrooms are soft. 3. Add soy sauce, broth, and spinach. Bring to a boil. 4. Add about 20-30 wontons and cook for about 3-5 minutes or until wontons are done. I’m back turning $50 of groceries into a week of easy, healthy meals! they’re all gluten & dairy free, and you can grab the entire grocery list from the caption of the last video 🤝🛒 I’m kicking it off with a shockingly simple but SO delicious lemony chicken and rice bake — the full recipe is below! 🍋 ingredients: - 2 tbsp olive or avocado oil - 1 lb boneless chicken thighs - 1 + 1/2 tsp salt - 1/2 tsp black pepper - 2 tsp smoked paprika - 2 tsp italian seasoning - 1/4 yellow onion, chopped - 3 garlic cloves, minced - 1 cup of white rice - 1 lemon, juiced - 1 cup chicken broth - 1/2 of 15oz can full-fat coconut milk - 2 cups chopped kale - up to 1 + 1/2 cups water, as needed - 1/3 cup fresh chopped parsley preheat oven to 375 degrees and drizzle the olive oil on a large skillet over medium heat on the stovetop. pat the chicken thighs dry with a paper towel, then season all over with the salt, black pepper, smoked paprika, and italian seasoning. transfer the chicken to the pan when the olive oil is heated. cook the chicken to crisp each side, about 5-7 minutes on each side depending on thickness, then set aside on a plate. in the same pan, add the chopped onion and sauté for 5 minutes, then add the minced garlic. when the onion and garlic are translucent, pour in the rice and let it toast for a few minutes, stirring frequently. add in the lemon juice, chicken broth, and coconut milk and mix to combine. add in all of the chopped kale and let it wilt down. add up to 1 + 1/2 cups of water as needed to wilt down the kale and make sure all of the rice is covered in liquid. transfer to the oven and bake for 15-20 minutes, until the rice is fully cooked and the chicken has an internal temp of 165 degrees. serve immediately or store the chicken and rice in airtight containers in the fridge for up to 4 days. enjoy!! #budgetshopping #groceriesonabudget #groceryshopping #groceryshop #groceryhaul #mealprep #mealprepping #mealprepideas #grocerylist #mealsonabudget #healthyonabudget #easyhealthyrecipes #glutenfreerecipes #dairyfreerecipes #traderjoes #chickenandrice

welcome back to my series where I’m turning a single $55 grocery list into your week of easy, healthy meals — this is recipe #1! 💕 if you’re new here, I post one recipe per day all week and all of them are gluten & dairy free and serve 3-4 people! the entire grocery list is in the caption of the previous video 😊 full recipe is below & also on my website! ingredients: - 1/4 cup olive oil - 3/4 large yellow onion, diced - 2-3 large carrots, diced - 10oz sliced white mushrooms - 4 garlic cloves, minced - 1-2 tsp salt + more as needed - 1/2 tsp black pepper - 1 tsp dried thyme - 2 tbsp cornstarch, arrowroot starch, or tapioca starch - 1/2 cup nutritional yeast - 3 + 1/4 cups vegetable broth - 1/2 cup water, plus more as needed - 2 tbsp coconut aminos or tamari - 1 cup wild rice, thoroughly rinsed - 1 heaping cup shredded kale - 1/2 15oz can full-fat coconut milk, shaken heat the olive oil over medium heat in a large pot, then add the diced onion and carrots. cook the onion and carrots, stirring periodically, for 10 minutes or until the onions are translucent, then add in the sliced mushrooms and minced garlic. stir and cook for another 10 minutes. mix in the salt, black pepper, and thyme and let the spices get aromatic, about 3-5 minutes. add in the starch and mix well to incorporate it into the vegetables. do the same with the nutritional yeast. pour in all of the vegetable broth, 1/2 cup of water, coconut aminos, and rinsed wild rice. put a lid on the pot and bring the soup to a boil. once boiling, reduce heat to medium-low and cook, covered, for 40-55 minutes, stirring occasionally. once the rice is fully cooked, mix in the shredded kale and coconut milk. allow the kale to wilt, then serve immediately or simmer over low heat until serving. store leftovers in an airtight container in the refrigerator for up to five days or in the freezer for up to a month. turning $50 of groceries into a week of easy, healthy dinners, recipe #3! 🛒💕 every day this week I’m sharing a new gluten & dairy free recipe that you can make using the grocery list from my first video! today’s recipe is perfect for freezing so if you have extras, you’re in luck! the full recipe is below! ingredients: - 2 tbsp olive or avocado oil - 1 lb boneless chicken thighs - 1 tsp + 1 tsp salt - 1/2 tsp + 1/2 tsp black pepper - 1 tsp + 1 tsp italian seasoning - 2 tsp smoked paprika - 3/4 yellow onion, chopped - 4-6 celery ribs, chopped - 3-4 large carrots, chopped - 3 garlic cloves, minced - 1 cup white rice - 2 cups chicken broth - 2 cups water (plus more depending on preference) - juice + zest of 1 lemon - 1/2 15oz can full-fat coconut milk - 1/4 cup fresh chopped dill - 1/4 cup fresh chopped parsley start by heating the oil in a large pot over medium heat and seasoning the chicken thighs all over with 1 tsp salt, 1/2 tsp black pepper, 1 tsp italian seasoning, & 2 tsp paprika. when the oil is heated, add in the chicken. fully cook the chicken by letting sit in the oil for about 7-9 minutes on each side, then remove from the pot, cut into small pieces, and set aside. in the same pot, add the chopped onion and sauté, stirring frequently, for 5 minutes. add in the celery & carrots and sauté until the onion is translucent. add in the garlic and remaining salt, black pepper, & italian seasoning. mix well and once the spices are incorporated and aromatic, add in the broth, water, lemon juice + zest, & rice. cover the pot and bring to a boil. once boiling, let the soup simmer for 20 minutes, covered. after the 20 minutes the rice should be fully cooked. you may need to add more water at this point depending on how liquidy you want the soup. add in the coconut milk, dill, & parsley, and add back the chicken. mix to incorporate and let simmer on low until ready to serve. enjoy immediately or store in an airtight container in the fridge for up to 5 days or freeze it!! enjoy 💕 #budgetshopping #groceriesonabudget #groceryshopping #groceryshop #groceryhaul #mealprep #mealprepping #mealprepideas #grocerylist

welcome back to my series where I’m turning a single $55 grocery list into your week of easy, healthy meals — this is recipe #1! 💕 if you’re new here, I post one recipe per day (5 total recipes) and all of them are gluten & dairy free and serve 3-4 people! the grocery list is in the previous video 😊 full recipe is below & also on my website! ingredients: - 1 lb ground turkey - zest of one lemon - 2 tsp salt - 1/2 tsp black pepper - 1 tsp dried oregano - 1 tbsp dried basil - 2 tbsp olive oil - 1/4 large yellow onion, diced - 3 garlic cloves, minced - 1 cup dry rice, rinsed - 1 tsp smoked paprika + salt & pepper to taste - 1 + 1/2 cups veggie broth (can sub chicken broth) - 1/2 13.5oz can full-fat coconut milk (3/4 cup) - juice of 1 lemon - 1-2 cups water (depending on need) - 1/2 6oz bag baby spinach preheat your oven to 400 degrees and line a sheet pan with parchment paper. in a large bowl, combine the ground turkey, lemon zest, salt, black pepper, oregano, and basil until it’s a uniform mixture. use a cookie scoop or spoon to shape the mix into ~12 even meatballs and place on the sheet pan. bake for 15-20 mins, or until the internal temp is at 165 degrees. while the meatballs bake, heat the oil over medium heat in a large skillet. add the diced onion and sauté until translucent. add the garlic and cook for another minute, then mix in the rice and season with salt & pepper + the smoked paprika. let the rice toast, stirring occasionally, for about 5 minutes then pour in the broth, coconut milk, and lemon juice. add 1-2 cups of water, depending on how much you need to completely cover the rice in liquid. mix to combine, then cover the pan and cook for 15-20 mins, until the rice is fully cooked. mix in the baby spinach and wilt it down, then add the cooked meatballs on top and top with a drizzle of olive oil and additional lemon zest if desired. makes 3-4 servings. enjoy!! 💕 #budgetshopping #groceriesonabudget #groceryshopping #groceryshop #groceryhaul #mealprep #mealprepping #mealprepideas #grocerylist #mealsonabudget #healthyonabudget #easyhealthyrecipes #glutenfreerecipes #dairyfreerecipes #traderjoes

20 Minute Wonton Soup 🫶🏻 1 Bag frozen mini Wontons 1 Carton (32 oz.) Ramen broth 5 green onions, sliced 1 carton mushrooms, sliced Spinach, bok choy, or cabbage 5 cloves minced garlic 1 tbsp ginger 1 tbsp sesame oil 1/4 cup soy sauce 1. Add sesame oil to pan over medium high heat. Sauté garlic and ginger for 30 seconds. 2. Add mushrooms and half of green onions and sauté until mushrooms are soft. 3. Add soy sauce, broth, and spinach. Bring to a boil. 4. Add about 20-30 wontons and cook for about 3-5 minutes or until wontons are done. welcome back to my series where I’m turning a single $60 grocery list into your week of easy, healthy meals — this is recipe #1! 💕 if you’re new here, I post one recipe per day (5 total recipes) and all of them are gluten & dairy free and serve 4 people! the grocery list is in the previous video 😊 full recipe is below & also on my website! ingredients: quick pickled veggies: - 2 large carrots, peeled & sliced - 1 cucumber, thinly sliced - 1/2 cup apple cider or white vinegar + up to 1 cup water - 2 tsp salt sweet potatoes: - 2 -3 medium sweet potatoes, peeled & cut into 1/2” cubes - 2 tbsp olive oil - 1 tsp salt - 1 tsp garlic powder - 1 tsp chili powder - 1 tsp dried oregano chicken meatballs: - 1 lb ground chicken - 1 tsp salt - 1 tsp garlic powder - 1 tsp chili powder - 1 tbsp ground ginger peanut sauce: - 1/4 cup creamy peanut butter - 1/4 cup coconut aminos - 1 tbsp sriracha - 1 tbsp maple syrup - 1 tbsp ground ginger - 1 tsp garlic powder - 1/4 cup warm water for serving: - 1 cup dry brown rice + 2 + 1/2 cups water - 1/2 cup fresh chopped cilantro (about 1/3 of a bunch) preheat oven to 400 & line a large sheet pan with parchment paper. add the carrots & cucumbers to a large jar or a bowl and cover with the salt, vinegar, & water. place in the refrigerator. cook the brown rice according to package instructions. peel and cube the sweet potatoes, then toss in the oil, salt, garlic, chili powder, & oregano to coat. transfer to the sheet pan and spread out, then bake for 20-30 mins, until tender to a fork. while the sweet potatoes cook, make the meatballs by combining the ground chicken, salt, garlic, chili powder, & ginger in a bowl. shape into 15-20 balls. when the sweet potatoes come out, push all of them to one side & add the meatballs to the other side. add back to the oven for 15 mins or until the meatballs are fully cooked (165 degrees). while the meatballs bake, make the peanut sauce by whisking all ingredients together in a bowl until smooth. assemble by placing even servings of the cooked rice, pickled veggies, potatoes, & meatballs in bowls. top with a generous drizzle of sauce and cilantro. enjoy immediately for best results 💕 #budgetshopping #groceriesonabudget #groceryshopping #groceryshop #groceryhaul #mealprep #mealprepping #mealprepideas #grocerylist #mealsonabudget #healthyonabudget #easyhealthyrecipes #glutenfreerecipes #dairyfreerecipes #wholefoods

welcome back to my series where I’m turning a $50 grocery list into 5 easy, healthy gluten-free & dairy-free meals — each recipe serves 4 people & this is recipe #3! 🛒 💕🥬🍝 grocery list is in the caption of the first video!! ingredients: - 4 green bell peppers, cut in half & seeds removed - 1 tbsp olive oil + 1 tbsp olive oil (separated) - 1 lb ground turkey - 1 tsp salt + additional to taste - 1/2 tsp black pepper - 2 tsp garlic powder - 1 tsp dried oregano - 1/4 tsp red pepper flakes (optional) - 1/4 yellow onion, diced - 1 + 1/4 cups basmati or jasmine rice, rinsed - 2 tbsp nutritional yeast - 2 cups veggie or chicken broth + 1 cup water - 16oz crushed tomatoes (half of a 28oz can) - 2oz baby spinach Preheat oven to 400 degrees and grab a deep baking dish (I recommend a 9x12 or 9x13 size). Slice the bell peppers in half, remove the insides, and cover the outsides with 1 tbsp of olive oil and a few sprinkles of salt. Place the peppers in the baking dish and transfer to the oven for 30-40 minutes to soften. Meanwhile, heat the remaining olive oil in a large skillet over medium heat. Add the ground turkey and brown all over to cook completely, breaking it apart into small pieces. Add the salt, black pepper, garlic powder, oregano, and red pepper flakes and fully coat. Remove the turkey from the skillet and set aside. In the same pan add in the yellow onion and sauté for about 5 minutes to soften. Add the rice and stir to combine, then mix in the nutritional yeast and a few sprinkles of salt. Pour in the broth, water, and crushed tomatoes, stir to combine and cover the skillet. Cook for 20-25 minutes, stirring halfway through, to fully cook the rice. Stir in the baby spinach and wilt down, then add back the ground turkey. Fill each of the 8 bell pepper halves with the turkey and rice mix. Be sure to stuff as full as possible to use up all of the mix, but you may have some leftover (feel free to enjoy separately!).
