SWEET POTATO BOATS WITH PECAN-FETA-DATE CRUMBLE! Using my favorite crumble ever & topping off these sweet potato boats for the most epic side dish! Perfect for the holiday 🫶 • For the crumble: 1/2 cup raw pecans 5-6 dates 2 oz feta cheese Handful arugula 1/2 tsp salt 1/2 tsp pepper Zest of 1/2 lemon • For the sweet potatoes: 4 medium sweet potatoes, halved Olive oil Salt • Optional tahini-balsamic: 2 tbsp tahini 1 tsp maple syrup 1 tsp balsamic vinegar Pinch salt 1 tbsp water *whisk to combine* • 1️⃣ Preheat the oven to 425.2️⃣Drizzle olive oil on the bottom of a large sheet pan, season with salt and place the sweet potatoes face down. Drizzle the tops with the oil and season with salt. Place in the oven for about 35 minutes, removing them from the oven at about 25 minutes. Flip them, move them to one side, then add the pecans to one side of the baking sheet and bake for 5 minutes. Remove the pecans from the sheet pan and allow the sweet potatoes to cook until tender. 5️⃣While the sweet potatoes roast, make the crumble. Add the pecans and begin to chop them, then add the dates and do the same. Continue to add the feta and arugula, chopping after each ingredient is added. Add the salt, pepper and lemon zest and chop until the mixture is combined and a “crumble” is created. 6️⃣Place the sweet potatoes on a plate, gently press down on each with a fork. The perfect winter salad 🤤 • For the sweet potatoes and beets: ¾ lb. beets, trimmed/peeled/sliced into 6 pieces 2 medium sweet potatoes, peeled, halved then sliced into thirds 3 tbsp olive oil, divided 1 tsp salt, divided 1 tsp paprika 1 tsp dried thyme • For the dressing: ½ cup feta cheese 2 tbsp olive oil 1 tbsp lemon juice 1/2 tbsp honey 1 tsp lemon zest Fresh black pepper to taste • For the salad: 1 15-oz can white beans 1/2 cup chopped cilantro 1/2 cup chopped parsley 1/2 cup sunflower seeds • 1️⃣Preheat the oven to 425. Line a sheet pan with parchment paper. 2️⃣Add the sweet potatoes and beets to the sheet pan, placing them on separate sides. Drizzle with the olive oil then season with the salt, paprika and thyme. The tastiest little bites 😊 • Sweet potatoes: 2 medium sweet potatoes, sliced into 1/2 inch rounds Olive oil Salt • Topping: 1/2 cup toasted walnuts 1/4 cup baby spinach 1/2 cup dried cranberries 1/4 tsp salt Pepper to taste 3 tbsp honey 1/2 tsp orange zest • Ricotta: 3/4 cup ricotta cheese 1/4 cup blue cheese crumbles • 1️⃣Preheat the oven to 425. 2️⃣Drizzle the sheet pan with olive oil, then brush it to coat. Sprinkle the sheet pan with salt. Spread the sweet potatoes onto a sheet pan and brush the tops with olive oil and season with salt. Place the sheet pan in the oven for 20-25 minutes, flipping halfway. 3️⃣While the sweet potatoes roast, make the topping. Sweet potato “hash” with a feta and pesto fried egg 💚 2-3 sweet potatoes 1 yellow onion 1 Jalapeen Eggs Pesto Feta Peel and shred sweet potatoes and soak them in some water to remove the starch. In the meantime, sauté your onion and jalapeño with salt and pepper until tender. Drain and dry the sweet potato. Add the onions and an egg to hold it all together. Add it to a pan and flatten it out but don’t move it until it’s brown on the edges and ready to flip. In the same pan add your feta and pesto and your egg on top. This garlic confit can be stored in a glass container or jar, because it makes a medium batch! These are like a honey-garlic “bread” but sweet potatoes 🙂 • For the garlic confit: 1 cup garlic cloves 1 cup olive oil 1 tsp peppercorns 2 bay leaves • For the sweet potatoes: 6 tbsp unsalted butter, melted 1 tbsp garlic oil (from above) 3-4 tbsp garlic cloves (from above) 3 tbsp honey 1/2 tsp salt 1/4 tsp pepper 2 tbsp fresh chopped parsley 2 medium/large sweet potatoes, sliced into 1/2 inch rounds • Toppings: 3 tbsp fresh chopped parsley 3-4 tbsp chopped pistachios 3-4 tbsp crumbled goat cheese Honey • • 1️⃣Preheat the oven to 400. Line a sheet pan with parchment paper and set aside. 2️⃣Make the confit. Add the oil, garlic, pepper and bay leaves to a small pan. Turn the heat onto low, cover and cook for 40 minutes.3️⃣Brush both sides of the sweet potatoes. Line them up on the sheet pan, then place them in the oven for 10 minutes. 3️⃣ Make the butter. Add the butter, oil, garlic, honey, salt, pepper and parsley to a small bowl and mix to combine. Set aside. 4️⃣Remove the sweet potatoes from the oven, flip them, then spoon a spoonful onto each round. Place the potatoes in the oven for about 25-30 minutes, until the potatoes are tender. Ingredients 1 lb sweet potatoes, cubed 2 tbsp olive oil 1 tsp garlic powder 1 tsp onion powder 1/2 tsp smoked paprika 1/2 tsp salt 1/4 tsp black pepper Instructions Add the cubed sweet potatoes to a large mixing bowl with the olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Combine until all the sweet potato chunks are thoroughly coated. Preheat the air fryer to 400 degrees Fahrenheit. Added roasted chickpeas & spinach here 🤤 • 1/3 cup pistachios 1/3 cup feta cheese 3 tbsp basil zest of 1/2 lemon Sea salt Pepper • For the sweet potatoes: 4 medium sweet potatoes, halved Olive oil Salt • Optional honey-tahini: 2 tbsp tahini 1 tbsp honey Squeeze lemon juice Pinch salt 1-2 tbsp water *whisk to combine* • 1️⃣Preheat the oven to 400. Drizzle olive oil on the bottom of a sheet pan, season with salt and place the sweet potatoes face down. Drizzle the tops with the oil and season the tops with salt. Place in the oven for about 20-22 minutes. 2️⃣While the sweet potatoes roast, make the crumble. Add the pistachios and begin to chop them, then add the feta, then the basil and continue to do the same, chopping after each ingredient is added. Add the salt, pepper and lemon zest and chop until the mixture is combined and a “crumble” is created. 3️⃣Remove the sweet potatoes from the oven, flip them over and move them to one side of the sheet pan. Add the chickpeas to the other half of the sheet pan and spread them out. Drizzle them with the olive oil, then season with the salt, paprika and garlic powder and toss. Place the pan back in the oven for 10-13 minutes, tossing halfway, until the chickpeas begin to brown. 4️⃣Remove the pan from the oven, remove the sweet potatoes from the pan and place them onto a plate. Add the spinach to the pan, then toss with the chickpeas. Place the pan in the oven for 2-3 minutes to let the spinach wilt. 5️⃣Gently press down on each sweet potato with a fork. Tatlı Patatesli (BADADEZLİ) Kıbrıs Köftesi: Sweet Potato & Beef Mince Cypriot Style Meatballs. If you do one thing this week, please make my Tatlı Patatesli Kıbrıs Köftesi. Forgot to swueeze 🍋 on the choping board, didnt I! 🧅😭 Ingredients: 500g sweet potatoes, finely grated 1 large onion, grated / finely chopped in the food processor 2 eggs 100g white breadcrumbs (I used GF, absolutely fine) 500g beef mince 50g fresh flat leaf parsley leaves, finely chopped 1 heaped tbsp fresh mint leaves, finely chopped / 1tsp dried mint 1/4 tsp ground cinnamon 1/4 tsp ground cumin 1/2 tsp coarse black pepper 1 tsp sea salt flakes / 3/4 tsp fine sea salt Method: Prepare the ingredients as above. Ensure that the grated sweet potatoes and onions have been strained through a sieve to rid them of any excess liquid. Whisk up one of the eggs in a bowl and add the breadcrumbs to the egg. Stir until the breadcrumbs have soaked up the egg (this will help to soften the breadcrumbs). Add all of the ingredients to a large bowl, including the remaining egg and mix together really well until fully combined. Using wet hands (which will prevent the mixture from sticking to them), form into 30 flattened rugby ball shaped patties. Air Fryer: Cook in the air fryer at 200c for 10 mins (spray with a little olive oil) turning halfway through Fry: Fry in enough light olive oil / sunflower oil at 190c so that the köfte are fully coated in the oil whilst cooking, until browned all over, yet cooked through. Oven: Place on a greased baking tray, spray with a little olive oil and bake in a preheated oven at 190c fan / 210c for 20-25 minutes or until browned on both sides and cooked through, turning halfway though. #MelizCooks #köfte #meatballs #sweetpotato #sweetpotatoes #potatoes #airfryer #recipes #recipereels

THE BEST oven roasted sweet potatoes! 😍🍠 This is my favorite way to cook sweet potatoes, they come out perfectly every single time and they are SO easy to make. The outside gets super caramelized with crispy edges, and the inside stays soft and tender 🙌 DELICIOUS!! This really isn’t a recipe, more of a method so adjust depending on how many people you are feeding! You need: - Sweet potatoes - Olive oil or olive oil spray - Salt How to: - Preheat your oven to 425F. Line a baking tray with parchment paper or foil for easy clean up. - Slice sweet potatoes in half lengthwise. - Brush the cut side with olive oil, or spray the tray really well and make sure the cut side gets coated with olive oil. - Bake for 35-45 minutes depending on the size of your sweet potatoes. They should be soft when you touch them and a fork should easily go through. - Flip them over and sprinkle well with salt. Perfect for the holiday 🫶 • For the crumble: 1/2 cup raw pecans 5-6 dates 2 oz feta cheese Handful arugula 1/2 tsp salt 1/2 tsp pepper Zest of 1/2 lemon • For the sweet potatoes: 4 medium sweet potatoes, halved Olive oil Salt • Optional tahini-balsamic: 2 tbsp tahini 1 tsp maple syrup 1 tsp balsamic vinegar Pinch salt 1 tbsp water *whisk to combine* • 1️⃣ Preheat the oven to 425.2️⃣Drizzle olive oil on the bottom of a large sheet pan, season with salt and place the sweet potatoes face down. Drizzle the tops with the oil and season with salt. Place in the oven for about 35 minutes, removing them from the oven at about 25 minutes. Flip them, move them to one side, then add the pecans to one side of the baking sheet and bake for 5 minutes. Remove the pecans from the sheet pan and allow the sweet potatoes to cook until tender. 5️⃣While the sweet potatoes roast, make the crumble. The tastiest little bites 😊 • Sweet potatoes: 2 medium sweet potatoes, sliced into 1/2 inch rounds Olive oil Salt • Topping: 1/2 cup toasted walnuts 1/4 cup baby spinach 1/2 cup dried cranberries 1/4 tsp salt Pepper to taste 3 tbsp honey 1/2 tsp orange zest • Ricotta: 3/4 cup ricotta cheese 1/4 cup blue cheese crumbles • 1️⃣Preheat the oven to 425. 2️⃣Drizzle the sheet pan with olive oil, then brush it to coat. Sweet potato “hash” with a feta and pesto fried egg 💚 2-3 sweet potatoes 1 yellow onion 1 Jalapeen Eggs Pesto Feta Peel and shred sweet potatoes and soak them in some water to remove the starch. In the meantime, sauté your onion and jalapeño with salt and pepper until tender. Drain and dry the sweet potato. Add the onions and an egg to hold it all together. These are like a honey-garlic “bread” but sweet potatoes 🙂 • For the garlic confit: 1 cup garlic cloves 1 cup olive oil 1 tsp peppercorns 2 bay leaves • For the sweet potatoes: 6 tbsp unsalted butter, melted 1 tbsp garlic oil (from above) 3-4 tbsp garlic cloves (from above) 3 tbsp honey 1/2 tsp salt 1/4 tsp pepper 2 tbsp fresh chopped parsley 2 medium/large sweet potatoes, sliced into 1/2 inch rounds • Toppings: 3 tbsp fresh chopped parsley 3-4 tbsp chopped pistachios 3-4 tbsp crumbled goat cheese Honey • • 1️⃣Preheat the oven to 400. Drizzle olive oil on the bottom of a sheet pan, season with salt and place the sweet potatoes face down. Drizzle the tops with the oil and season the tops with salt. Place in the oven for about 20-22 minutes. 2️⃣While the sweet potatoes roast, make the crumble. Forgot to swueeze 🍋 on the choping board, didnt I! 🧅😭 Ingredients: 500g sweet potatoes, finely grated 1 large onion, grated / finely chopped in the food processor 2 eggs 100g white breadcrumbs (I used GF, absolutely fine) 500g beef mince 50g fresh flat leaf parsley leaves, finely chopped 1 heaped tbsp fresh mint leaves, finely chopped / 1tsp dried mint 1/4 tsp ground cinnamon 1/4 tsp ground cumin 1/2 tsp coarse black pepper 1 tsp sea salt flakes / 3/4 tsp fine sea salt Method: Prepare the ingredients as above. Ensure that the grated sweet potatoes and onions have been strained through a sieve to rid them of any excess liquid. Whisk up one of the eggs in a bowl and add the breadcrumbs to the egg. Stir until the breadcrumbs have soaked up the egg (this will help to soften the breadcrumbs). Add all of the ingredients to a large bowl, including the remaining egg and mix together really well until fully combined. Using wet hands (which will prevent the mixture from sticking to them), form into 30 flattened rugby ball shaped patties. Air Fryer: Cook in the air fryer at 200c for 10 mins (spray with a little olive oil) turning halfway through Fry: Fry in enough light olive oil / sunflower oil at 190c so that the köfte are fully coated in the oil whilst cooking, until browned all over, yet cooked through. THE BEST oven roasted sweet potatoes! 😍🍠 This is my favorite way to cook sweet potatoes, they come out perfectly every single time and they are SO easy to make. The outside gets super caramelized with crispy edges, and the inside stays soft and tender 🙌 DELICIOUS!! This really isn’t a recipe, more of a method so adjust depending on how many people you are feeding! You need: - Sweet potatoes - Olive oil or olive oil spray - Salt How to: - Preheat your oven to 425F. Line a baking tray with parchment paper or foil for easy clean up. - Slice sweet potatoes in half lengthwise. - Brush the cut side with olive oil, or spray the tray really well and make sure the cut side gets coated with olive oil. - Bake for 35-45 minutes depending on the size of your sweet potatoes. They should be soft when you touch them and a fork should easily go through. - Flip them over and sprinkle well with salt. Because they are higher in carbohydrate than other vegetables, enjoying them without a blood sugar spike can often require a little more planning and thinking ahead. Sweet potatoes are rich in: Vitamin A (beta carotene), Vitamin B6, Vitamin C, potassium, and fiber. Orange sweet potatoes contain more beta carotene, while purple sweet potatoes contain more anthocyanins. Both beta carotene and anthocyanins, are health promoting antioxidants. A small sweet potato (about 5in long) contains about 26g carbohydrate. How quickly they can raise blood sugar levels will depend on how they’re cooked. This is because the glycemic index of sweet potatoes varies depending on how they are prepared (and remember, glycemic index gives us insight into how quickly a foods can raise your blood sugar levels). Depending on the cooking method, sweet potatoes can be a low, moderate, or high glycemic index food. Boiling sweet potatoes with the skin on for at least 30 minutes seems to be the most blood sugar friendly cooking method. It preserves the most resistant starch and thus contributes to a lower glycemic index. Roasting and baking destroy a larger amount of resistant starch and thus make for a higher glycemic index dish. Literally 💣 • For the onions: 6 yellow onions 2 tbsp unsalted butter 1 tbsp olive oil 1/2 tsp salt 1 tsp sugar 1/2 cup veggie stock (optional use half white wine) 1 tbsp balsamic vinegar • For the chickpeas: 1 15 oz can chickpeas, rinsed and drained 1/2 tbsp olive oil 1 tbsp Italian seasoning 1/2 tsp salt • For the sweet potatoes: 3 medium sweet potatoes, halved Olive oil Salt • For the kale: 2 cups finely chopped kale 1 tbsp olive oil Salt and pepper to taste • Toppings: Goat cheese or feta • Optional lemon-honey-tahini (in comments) • 1️⃣Preheat the oven to 425. Line a sheet pan with parchment paper and set aside. 2️⃣Make the onions. Heat butter & oil over medium. Add onions, salt & sugar- sauté for 8-10 minutes until softened. Add broth & let the onions & broth cook down for 25-30 minutes, stirring every 5-7 mins. Once the liquid has reduced completely, add balsamic vinegar and continue to sauté the onions for another 5-10 minutes, until browned. 3️⃣While onions cook, make the sweets. Add a generous drizzle of olive oil to the sheet pan, sprinkle with salt & add the sweet potatoes, face down. More on Curing ⬇️ 1st I’d always recommend cooking sweet potatoes before eating 😂 and curing really does make them so much sweeter! Curing is essentially a low and slow cook that turns the starches in the sweet potato sweet. so really without it it’s just a faux potato… 😅 I typically cure my sweet potatoes in my greenhouse, but I have found the cooler method to work extremely well, and it can be accomplished by anyone. Those of us that are growing sweet potatoes at home typically have the necessary seed starting supplies to make this happen, but if you don’t have a thermostat controlled seedling heat mat let me know in the comments and I’ll send you the one that I have. 🌱 Keeping the sweet potatoes at humidity and temperature for the requisite amount of time is key. Once you’ve got the sweet potatoes loaded into your cooler, on top of the seedling mat, add a glass of water for a day and prop open the cooler slightly. Once you see moisture start to form inside of the cooler, remove the cup of water and let the sweet potatoes cure with the cooler propped open for the remainder of the one to two weeks. At this point, take one out, cook it up and give it a taste to see if you have achieved the desired sweetness, or you can let them go for another week. Candied Yams!? Actually, candied sweet potatoes. Confusing, right? Ingredients 2 lbs. Sweet Potatoes 1 c. Water 4 Tbsp. Orange Juice 3/4 c. Brown Sugar 1 c. White Sugar 1 Stick Butter, unsalted 2 Tbsp. Vanilla Extract 2 Tsp. Cinnamon 1 Tsp. Salt 1 Tsp. Nutmeg 1/4 Tsp. Ginger 1 1/2 Marshmallows, optional Instructions - Wash, scrub and peel your sweet potatoes and slice them into 1/2 inch rounds. In a medium pot, over medium-heat, combine sweet potatoes, water, orange juice, brown sugar, whiter sugar, butter, vanilla extract, cinnamon, salt, nutmeg, and ginger. Mix, everything until each sweet potato is coated. Allow sweet potato liquid to come to a boil. Cover the pot with a lid, but leave the lid ajar to allow steam to escape. Reduce heat to low, and simmer for 40-50 minutes, or until the sweet potatoes are tender when pierced with a fork. Remove the lid, and transfer the sweet potatoes to a baking dish, set aside. Increase temperature to medium heat and allow the liquid to reduce and thicken, about 10 minutes. Pour syrup over candied yams. (OPTIONAL) Preheat oven to 400° Fahrenheit. CAPRESE SWEET POTATO BITES WITH ITALIAN CHICKPEAS! They melt in your mouth. • For the tomatoes and chickpeas: 1 pint cherry tomatoes, chopped 1/2 15-oz can chickpeas, rinsed and drained 1 tbsp olive oil 1/2 tsp salt 1/4 tsp pepper 1/2 tbsp Italian seasoning • For the sweet potatoes: 2 large sweet potatoes, sliced into 1/2 inch rounds Olive oil Salt 2 tbsp fresh basil 1/2 cup fresh mini mozzarella balls • Fresh basil, for topping Tahini, optional for topping • 1️⃣Preheat the oven to 425. Line a sheet pan with parchment paper and set aside. 2️⃣Make the chickpeas and tomatoes. Add the cherry tomatoes to one side of the lined sheet pan and the chickpeas to the other side. Drizzle the oil over the top, then season with the salt and pepper. Add the Italian seasoning to the chickpeas. Toss the chickpeas and the tomatoes individually, then place in the oven for 20-25 minutes until the tomatoes are tender and the chickpeas are slightly crisp. 3️⃣Drizzle olive oil over a separate sheet pan, then add some salt over the oil. Brush the pan to spread the oil. Add the sweet potatoes, then brush the tops with olive oil and season with salt. Place them in the oven for 18-20 minutes. Remove them, flip them then spoon the tomatoes evenly over the potatoes, add 3 mini mozzarella balls and a bit of the fresh basil.
