PART 5. Did you know about this 🧀 etiquette? The reason is because if you “cut the noise” or “cut the point” you are cutting off the ripest and potentially best part of the Brie (and hogging to for yourself). Think of the Brie wedge 🔽 coming from a large round Brie wheel ⚪️. The center of the wheel is the most ripe part and gets less ripe as you get to the outer edge. By cutting the long slices, more people can have a taste of the center/tip and share in the variations of ripeness throughout the wedge. Oftentimes, this etiquette is not followed. The tip goes first and at the end of the party the Brie has been picked over with a sad hunk of rind left behind. That said, I often break this rule when shooting cheese videos. For instance, I break it in Part 3 of this Brie series (because I wanted a great shot that would show the filling) and in the video for my @worldmarket cheese knives because (again) the shot looked better. But at parties I try to do it the “right” way.

Part 4 of Brie Week - Smashed Blackberry and Brie Crostini INGREDIENTS: 18 ounces blackberries washed 1 tbsp raw honey plus more as needed 1 tsp vanilla Pinch kosher salt 1 baguette sliced into 1/2-inch rounds 1 4-ounce package prosciutto (optional) cut in half lengthwise 1 Supreme Cheese Brie Oval sliced The Topping 1 .75-ounce package fresh mint leaves removed INSTRUCTIONS: Set the broiler to low. Drizzle the baguette rounds with olive oil and sprinkle with salt. Broil for 1 to 2 minutes on each side until golden brown. Remove from the oven. If using prosciutto, top half of the rounds with a slice of prosciutto, so it creates a layered ribbon effect, then add the brie and return to the oven for one minute more, or until the brie is slightly melted. Meanwhile, add the blackberries, vanilla, honey, and salt to a bowl and mix until evenly coated. Smash roughly with a fork until a very chunky jam forms (be careful not to go overboard), then let marinate. Top each crostini with the blackberry mixture, then garnish with mint leaves.
