Kullaj a Palestinian dessert layered with flaky phyllo dough and a milk custard in the center, one of my favorite desserts ever! Every country has their own version and this is how my Palestinian grandmother taught me how to make hers🥰 it’s delicious 🤤 it’s a mix of baklava and warbat and makes the most perfect dessert 👌🏻 Recipe is written down below! Milk custard( Mhalabiyeh) -1 cup milk -1 1/2 cups heavy whipping cream -2 tablespoons granulated sugar -2 tablespoons cornstarch -1 tsp rose water or orange blossom water Simple syrup -1 1/2 cups granulated sugar -1 cup water -1 tsp rose water -2 pieces of lemon peel 16 pieces of phyllo dough Crushed pistachios for garnish 1 1/2 stick unsalted butter To a large pot add everything listed for the milk custard and mix very well until the cornstarch dissolves. Bring the milk to a low simmer mixing constantly so it doesn’t burn and until thickened. Once thickened place the custard in a large bowl and cover with plastic wrap, make sure the plastic wrap touches the milk custard so it doesn’t leave a thick layer on top. For the simple syrup boil everything together that is listed until it thickens and you have a syrup consistency. Once the milk custard has thickened and cooled down you can take the phyllo dough out of the package and layer. Melt the butter and remove the foam part at the top of the melted butter to make clarified butter. Next add some parchment paper to a large baking dish and layer one piece of phyllo dough and brush with the butter, continue until you have 8 layers of phyllo dough. Add the milk custard , spread it and then add another 8 layers of phyllo dough with butter in between each layer. Cut into 12 squares and bake at 350 for 20-25 minutes until nicely crisp and golden. Pour the simple syrup on top immediately once it comes out of the oven and sprinkle some crushed pistachios! Mango horchata, i had this saved in my drafts for almost a year and forgot to post it! I love adding fruits to horchata, you can change it up and add pineapple , or any other kind of fruit 🫐🍓🍌you all loved the strawberry horchata I know you will love this one as well! -1 cup rice -4 cups hot water -4 cinnamon sticks -7 mangos for purée + 2 more for garnish - 1 1/2 cups milk of choice -12 oz can evaporated milk -14 oz can sweetened condensed milk -1 tsp vanilla To a large bowl add the rinsed cup of rice, with the cinnamon sticks and hot water, let it sit in the fridge overnight covered with plastic wrap. The next day blend it with the 3 cups of water it was soaking in and an extra cup of water. Once blended well strain for a smooth consistency, pour into a large glass pitcher with all the milk listed above , vanilla and mix well. Now start on the mango purée, cut up all the mango’s and blend with a bit of water for an extra smooth consistency. Mjadara is a Middle Eastern rice dish that consists of rice, lentils, caramelized onions and olive oil🫒 this simple and humble meal is one of my favorites! Serve with a spicy salsa, cucumber, mint & garlic yogurt + a salad and it’s amazing 🥰 Enjoy! -1 cup jasmine rice -1 1/2 cups brown lentils -3 onions (use half of 1 to cook with rice) -4 cups water(1 of the cups to cook the lentils) -2 tsp salt (add more if needed) -1/2 tsp cumin -2 tablespoons olive oil + 1/2 cup more for frying sliced onions Sauté 1/2 of a chopped onion with the 2 tablespoons of olive oil until softened. Add in the washed brown lentils and 1 1/2 cups water . Bring to a simmer and cook until the lentils are halfway cooked . Add in washed jasmine rice and add more water to cover the rice and lentils, add salt and cumin and bring to a low simmer and cover with a lid for 15-20 minutes until the rice is soft . Fry the sliced onions while the rice and lentils are cooking until caramelized . Once the rice is done m top the rice with the caramelized onions and mix well.
