Kullaj a Palestinian dessert layered with flaky phyllo dough and a milk custard in the center, one of my favorite desserts ever! Every country has their own version and this is how my Palestinian grandmother taught me how to make hers🥰 it’s delicious 🤤 it’s a mix of baklava and warbat and makes the most perfect dessert 👌🏻 Recipe is written down below! Milk custard( Mhalabiyeh) -1 cup milk -1 1/2 cups heavy whipping cream -2 tablespoons granulated sugar -2 tablespoons cornstarch -1 tsp rose water or orange blossom water Simple syrup -1 1/2 cups granulated sugar -1 cup water -1 tsp rose water -2 pieces of lemon peel 16 pieces of phyllo dough Crushed pistachios for garnish 1 1/2 stick unsalted butter To a large pot add everything listed for the milk custard and mix very well until the cornstarch dissolves. Bring the milk to a low simmer mixing constantly so it doesn’t burn and until thickened. Once thickened place the custard in a large bowl and cover with plastic wrap, make sure the plastic wrap touches the milk custard so it doesn’t leave a thick layer on top. For the simple syrup boil everything together that is listed until it thickens and you have a syrup consistency. Once the milk custard has thickened and cooled down you can take the phyllo dough out of the package and layer. Melt the butter and remove the foam part at the top of the melted butter to make clarified butter. Next add some parchment paper to a large baking dish and layer one piece of phyllo dough and brush with the butter, continue until you have 8 layers of phyllo dough. Add the milk custard , spread it and then add another 8 layers of phyllo dough with butter in between each layer. Cut into 12 squares and bake at 350 for 20-25 minutes until nicely crisp and golden. Pour the simple syrup on top immediately once it comes out of the oven and sprinkle some crushed pistachios!
