Do ensure the water is enough to last through the whole cooking process (2) In a bowl, sift your dry ingredients and set aside (3) In another bowl, add in eggs and mix in with sugar. Beat till it turns pale yellow. Add in vanilla essence, condensed milk and mix till well combined (2-3 mins) (4) Slowly add in dry ingredients in 3-4 batches till it reaches to a thick dark mixture. Add in milk and continue mixing. Add in corn oil, coffee for that rich deep flavour as well as hot water into the batter. End result: Liquid-like chocolate mixture (5) Line your 8x8inch square tin with baking paper (glued with butter), pour your batter and tapping multiple times to allow the air to escape. Use toothpick and glide across the batter and cover with aluminium foil (to avoid condensation) and pop it in the steamer for about 40 mins. (6) Use toothpick and it should come out dry (bits of cake on it is fine!), allow to cool 10-15 mins. (7) Using double boiler method, melt the chocolates and then proceed to mix in the remaining ingredients till it reaches a smooth and slightly thick texture. Immediately pour over cooled cake and chill in the fridge overnight/ 5 hours. (8) Allow the cake to come into room temp and then use a serrated knife and dip in hot water, wipe and cut off the sides of the cake. Wipe after each cut and repeat. Cut into desired slices and serve!
