Black bean and tofu patty’s with some roasted carrots for dinna 🥕🫘 Carrots: 4 large carrots 4 cloves of garlic 1 tsp cumin 1 tsp paprika Pinch of cayenne 1 tsp onion powder 1 1/2 cups grated cheese (should’ve used parm) Peel and cut carrots into similar size pieces. Add all of the seasonings, salt and pepper and some olive oil. Add the grated cheese to your pan and lay your carrots cut side down. Roast at 400 for 25 mins. Bean patties: 1 yellow onion 1 jalapeño 1 can of black beans 1 block of extra firm tofu 2 tablespoons tomato paste 1 tsp paprika Salt and pepper 1 or 2 eggs Sauté an onion and jalapeño in some oil with salt and pepper until tender (you could also add the shredded tofu and tomato paste at this point too) Add to a bowl then add the black beans and cooked tofu with tomato paste. Add some fresh parsley, paprika, maybe some cumin, salt and pepper and breadcrumbs and an egg or two. Mix it together and cook a small patty to make sure it tastes good and holds together. If not add more breadcrumbs or another egg. Form your shape and fry on both sides. I served it with hummus and yogurt and some lettuce and toast! You could for sure for sure make a burger!
