Palestinian ✨sfeeha yafawiyeh✨ I believe it’s traditionally made with meat but I used spinach and cheese and it was so delicious and easy to make! This recipe made me 5 spiral cuties! The dough was very simple I didn’t measure anything but there’s no yeast involved so it’s not a finicky at all: One cup of flour 1 tablespoon olive oil Pinch of salt Enough water to bring it together Mix all the ingredients together and knead for 5 minutes. Cover with plastic and a towel and let it relax while you make the filling. 1 onion 1 jalapeño 4 cloves of garlic 1 box of spinach 1/4-1/2 cup pine nuts you can substitute with toasted slivered almonds! 1/2 cup shredded mozzarella 1/4 cup white cheese or feta 1 tablespoon sumac 1 tsp cumin Pinch of cinnamon Sauté onion and jalapeño with salt and pepper until tender and then add garlic. Sauté for a few mins then add chopped spinach cook for 2 mins and remove from heat. Toast pine nuts until slightly browned and add to the pan. Add your cheese and adjust salt if needed. Form the dough into a log and cut 5 even pieces. Roll into balls and let rest for 10 mins so it’s easier to press out. Add a generous amount of olive oil to the surface and start pressing out the dough with your hands. It’s so so easy and so quick! Keep spreading the dough until it’s as thin as possible being careful not to rip through. Place the filling on the bottom edge of the dough and start rolling it up and then roll it into a spiral. Place on parchment lined tray and bake at 400F for 25 ish minutes being careful to keep your eye on it. The bottom will get browned before the top so be mindful.
