This chicken adobo exceeded every expectation I ever had for this dish… wow What should I make next for you guys?? Let me know in the comments 🥰 Ingredients: 4-6 drumsticks (depending on how much you’re feeding) 2 tbsp neutral flavoured oil 1 onion, sliced Salt and pepper 3-4 bay leaves 1/2 cups rice Sauce: 1/2 cup soy sauce 1 tbsp dark soy sauce 1/2 cup rice wine vinegar 1/4 stock 3 tbsp brown sugar 4 garlic cloves, crushed 1 tbsp ginger, freshly grated To serve: Tomato Cucumber Method: 1. In a jug or bowl, combine the ingredients for the sauce. 2. In a pan on medium-high heat with neutral oil, brown off the chicken drumsticks on either side. 3. After a couple of minutes on both sides, remove from the pan and set aside. 4. Lower the heat to medium, add the onions with salt and lots of pepper and saute until soft. 5. Once softened, add the sauce and cook for 30 seconds before adding the chicken back in. 6. Add the bay leaves and submerge them into the sauce before covering the pan, lowering the heat to low and leaving to cook for 20 minutes. 7. Now is the perfect time to cook your rice. Wash it. Add 3 cups of water. Bring to a boil for 5 minutes, lower the heat, simmer for 5 minutes then turn off the heat and allow the steam to finish cooking the rice for 15 minutes. Don’t lift that lid!!!! 8. After 20 minutes the chicken should be falling off the bone and the rice should be perfectly fluffy. Serve the chicken on a bed of rice, a decent drizzle of the thick, glossy sauce and a side of tomato and cucumber to help cut through the richness. #adobo #chickenadobo #chickendinner

When the neck vein pops you know I mean serious business 🚨 But in all seriousness, I cannot explain the importance of mise en place enough. There is a reason restaurants will spend hours throughout the day preparing as much as possible before service rolls around so why should it be any different for home cooking? We obviously don’t need to spend hours prepping for a single dish considering we’re only feeding 1-6 and not hundreds but the analogy still solidifies the importance of preparation. Efficiency is key. But efficiency in the kitchen doesn’t necessarily mean you should prep your veges whilst searing off your protein. It takes your concentration off one thing and spread it across two. And we all know there can be only a few seconds between just done and burnt. But having everything prepared prior to cooking, allows you to hone in and focus on one step at a time. Do yourself a favour and mise en place as much as you possibly can before you play with heat. Invest in a variety of small dipping bowls that you can use for this purpose exactly how I use them in this video. Once you get into the habit of preparation, you’ll be able to focus on certain cooking queues a whole lot more which will result in your cooking improving each and every time you step into the kitchen. #cookingtips #kitchentips #cookinghacks #kitchenhacks

My take on a fillet-o- fish. The great thing about this recipe is it uses a lot of common household ingredients. Ingredients for 4: 4 sesame brioche buns Cheddar cheese 1/2 cup neutral oil (canola, vegetable, grape seed etc.) 4 fillets of thick, white, firm fish Salt and pepper 2 cups breadcrumbs 1 cup flour 4 eggs Tartar: 1/2 cup mayo 2 tbsp finely chopped pickles 2 tbsp finely chopped capers 1 tbsp chopped dill 1/2 lemon, juiced Salt and pepper Method: 1. Salt the fish all over and set it aside. 2. Combine all of the ingredients for the tartar and stir to combine. 3. In 3 seperate bowls, add the breading stations, flour, eggs (whisked together) and flour. Season all 3 stations with salt and pepper and stir through. 4. Pat the fish fillet dry before starting the breading process. Flour, dust off the excess, egg, drip off excess, breadcrumbs (apply pressure to ensure they stick), back into the egg, drip off excess and then back into the breadcrumbs. 5. In a pan on medium heat with neutral oil, carefully place the fish away from you to avoid splash back. Ensure you wait for the oil to heat up before adding the fish. You can test this by sticking a chopstick into the oil. If it bubbles it’s ready. 6. After a couple of minutes, flip the fish and carefully baste the fillet with the oil to ensure an even cook. If your fillet is thick, flip it onto all 4 sides until golden and crunchy. 7. Once cooked and golden, remove from the pan, immediately salt and allow to rest. 8. Toast the brioche buns before layering the tartar, cheese, fish, more tartar and bun. 9. Serve and enjoy! #filletofish #fakeaway #fishburger #dinnerideas #easyrecipes #dinnerinspo

A naughty but nice kale and broccoli Caesar salad. Ingredients: 1 small cos heart, chopped 1 head of broccoli, cut into florets 1 bunch of kale, stems removed & washed 4 tbsp olive oil 1 tsp garlic powder 1 tsp onion powder Salt and pepper 200g bacon (I used streaky maple bacon), chopped 1/2 cup panko breadcrumbs 1/3 cup freshly grated Parmesan Caesar dressing: 1/2 cup mayo 1 tsp Dijon mustard 2 tsp Worcestershire 2 garlic cloves, minced 1/2 lemon, juiced Salt and pepper 1 tbsp water Method: 1. Preheat your oven to 180 degrees. 2. Place your broccoli onto a lined baking tray and season with 2 tbsp of olive oil, 1/2 tsp garlic powder and 1/2 tsp onion powder. 3. Massage it in then pop it into the oven to roast. 4. Prepare your washed kale the same as the broccoli. 2 tbsp olive oil, 1/2 tsp garlic powder and 1/2 tsp onion powder. Massage these into the kale really really well for approx 60 seconds. 5. After the broccoli has had a little head start in the oven, add the kale to the same lined baking tray and pop it back into the oven. 6. Cook off the bacon until crispy. Remove from the pan leaving as much fat in the pan as possible and set aside. 7. Toss the broccoli and kale and crank the heat to 190-200 to get things nice and crispy. 8. Add the breadcrumbs into the same pan you cooked the bacon in and toast until golden. 9. Combine all of the ingredients for the dressing and set aside. 10. After the veggies have roasted and are nice and crispy, assemble the salad with all of the components and enjoy! #caesarsalad #dinnerideas #dinnerinspo #saladrecipes #salad #easyrecipes
