High protein, easy egg bite breakfast 🍳 These have been a staple in our house for a while! They’re so yummy and make eating a protein rich breakfast easy! Which was a fundamental piece of my PCOS healing journey. Ingredients 12 eggs 1 cup of cottage cheese 1 cup of cheese 1 tsp salt 1 tsp pepper Directions: 1. Preheat the oven to 350 F. 2. Cook the chorizo over the stovetop until done. I like mine extra crispy! 3. Add eggs, cottage cheese, cheese, salt, and pepper to a blender until the mixture is smooth and consistent. 4. Add the mixture to muffin tins (about 3/4 way filled). 5. Top off with the chorizo. 6. Cook for 20 mins. Enjoy! P.S. Feel free to add anything else. Sometimes we add peppers too.
