Starter from scratch: day 1– 1/2 cup flour 1/4 water. stir and set in warm place. day 2– do nothing. day 3– discard half, add 1/4 cup flour and <1/4 cup water (a good thick batter texture). stir and set in warm place. day 4/5/6/7…until it gets bubbly and rises— repeat steps from day 3. don’t worry about it doubling!! as long as it’s getting bubbly and active you are good to bake 👍🏼

Part 2/4 of my simple sourdough series! Recipe below. LOOK I KNOW I’M NOT AN ARTISAN SOURDOUGH BAKER BUT I NEVER CLAIMED TO BE!!! THIS IS FOR MY NON-SCIENTIFIC FLY-BY-THE-SEAT-OF-THEIR-PANTS GIRLIES •4 cups flour •1 1/3 cup warm water •~1/4 cup sourdough starter •2 teaspoons salt Mix together in a bowl until shaggy. Let rest for 15-30 minutes. Form into a cohesive ball. If it’s too sticky, sprinkle on some more flour. If it’s too dry to form a smooth ball, sprinkle on some more water. Let rise for as little as 3-4 hours in warm/hot weather, or as much as 24 hours in the fridge. 8-12 hours overnight at room temp is standard. Dust your hands with flour and gather together the dough from the bowl and stretch and fold all sides into the middle to form a ball again. Let it rest 5-15 minutes. Meanwhile, place a dish cloth in a bowl and sprinkle over with flour. Also place your covered pot or dutch oven in the oven and begin to preheat to 475. Place dough in floured bowl seam-side up. Let rise for 45-60 minutes while oven preheats. Place dough seam-side down into hot pot and cook covered for 20 minutes. Remove lid and continue baking for another 25-35 minutes. Take out of pot and let cool for at least an hour before slicing.

As for this vid: making sourdough bread is not as time-consuming as you probably think. And the cost of flour can be even cheaper if using non-organic flour in bulk!
