Replying to @Christina Spicy Salmon Rice Bowl 🐟 🍚: Ingredients: - 2 skin off salmon tails (season with salt, pepper and seasoning of your choice) - 2 cups cooked white rice (I used saffron, you could also do normal or garlic white rice). - 1 sliced avocado. - 1 sliced Lebanese cucumber. - As much spicy mayo as you like (I mix kewpie, sriracha and soy sauce together with some white pepper and smoked paprika, taste it and adjust how you like) - Pickled onions to taste. - Crumbled feta to taste. - Coriander, lemon juice and sliced spring onion to finish. - Optional: I add furikake and togarashi. - Serves 2 people (maybe 3) Steps: 1. Marinate your salmon for 30 mins out of the fridge. Fry on each side for 3 minutes or until fully cooked. Let it rest for 10 minutes in foil then shred it. 2. While the salmon is cooking, cook white rice per packet instructions. 3. Slice cucumber and avocado and set aside. 4. Make a spicy mayo by mixing together the ingredients above. 5. Replying to @Akaza Sun dried tomato pesto pasta salad with harissa air fryer chicken thighs, rocket, cherry tomatoes, roasted peppers, avocado and burrata, topped with fresh basil 🍝 🥗 Ingredients: - 350g cooked penne pasta. - 1/3 cup sun dried tomato pesto. - 2 air fryer chicken thighs, seasoned to your liking (season 2 chicken thighs, air fry with some cooking oil for 18 mins at 200 degrees, flipping halfway). - 2 cups chopped rocket. - 1 cup diced cherry tomatoes. - 2 diced avocados. - 1 burrata. - 2 tbsp fresh Basil. - 1 cup roasted capsicum. - 1 tbsp oregano. - 2tbsp red wine vinegar. - Salt and pepper to taste. - Parmesan to taste (I like a lot lol). Method: 1. Prepare your chicken as per your liking and boil your pasta to packet instructions in well salted water. 2. Let the pasta cool until it is warm and add into a bowl. Add in pesto, rocket, avocado, roasted capsicum, oregano and red wine vinegar. Season with salt, pepper and Parmesan to your liking. 3. Replying to @An Feta Orzo Pasta Salad 🥗 Ingredients: - ~400g risoni or orzo pasta, cooked Al dente - 2 Lebanese cucumbers, diced. - 2 red capsicums, diced. - 4 chopped spring onions. - 180g feta (yes you read that right). - 1/2 cup chopped dill. - 2 cups chopped baby spinach. - 1/2 cup chopped green olives. - 1/4 cup EVOO. - 1/4 cup balsamic vinegar. - 2 tbsp whole grain mustard. - 1/4 cup fresh grated parmesan. - 1 tbsp dried oregano. - 1/2 tbsp dried thyme. - Salt and pepper to taste (lots of it, start off small taste it, then keep going in increments until it’s perfect!)
